This is a real basic Paella de Pollo (Chicken paella) for the newbie using a paella pan for the first time. If you conquer this paella, you will no doubt be able to make any other paella that you like. These steps are basic steps for ANY paella. I am sure you will love cooking and serving your friends a delicious home made paella.
4 cups chicken stock
1 pinch saffron
1/4 cup Spanish olive oil
4 lb. boneless, skinless chicken thighs - cut in strips
2 tbsp sweet paprika
Salt & pepper to taste
1 large red pepper, julienned
1 cup green beans
1 15oz. can crushed tomatoes
3 garlic cloves, chopped
2 cups Bomba rice, or a short grain rice (you can use long grain but it is not traditional)
1/2 cup sweet peas
1/2 cup Pimentos or roasted red peepers, diced
1 lemon cut in half.

Great video! I have a glass top stove and I was thinking of buying a flat bottom paella pan, but I see you are using the traditional rounded type. Are the traditional ones just fine for glass cooktop? It would certainly save me a lot of money if I can use traditional just fine.
Hi Mark it works, but it is not as flat as a stainless steel pan. You have to watch it and keep it moving so it does not burn on the most contact side.

If i use abrorio rice what would be the ratio for the liquid to rice?
aaron munoz hi Arron, what ever the rise manufacture recommendation is, use that measurement. Some rice manufactures will say 2-1 others will say 3-1. Use what ever they have on the back of the package. Hope this helps.

Can I use any rice? Or this rice you use is special type?
Cristy G hi Cristy I like to use bomba rice when I can find it but you can use a long grain rice with no problem.
