No matter what he does it’s done with precision and perfection, and yet…it’s never cold or “soulless”. His exacting standards and methodical practice is just stunning. That pastry is textbook and it’s so so hard getting a croissant right!! The simplest things can be deceptive, I’m just blown away again and again by how EASY Amaury makes it all look. Dough lamination is fussy fussy, and sure, he’s got a gadget but the gadget can’t fix a bad recipe.
I can just feel his joy when he is working on his creations. The focus, care and attention to detail is so inspirational. Just observing him in action is meditative. I would love to study with him one day. ❤️🙏

Croissants will always have a special place in my heart. A good quality croissant is one of the most delicious things you can eat in my opinion. It's such a laborious pastry to make though.
