I've been binge watching all of your vods since I am very studied in Japanese and my husband is Korean, and I've been thoroughly entertained every second. Thank you again, guys. I don't even know if you realize that you are making a dying culture accessible for the newer generations/foreigners, but you are, and this work is imperative, and my family is grateful. You are educating people in fun and trendy way about these antediluvian cultures, and you are even brave enough to speak of the negatives that the cultures, unfortunately, carry. In Germany we eat raw beef/pork (mixed with onions and various spices, often) on bread, it's called Mett or Hackepeter, so this doesn't look weird to me :D I know it's weird to some but I'm glad you're giving it all a try :D

Ma grandfather in Poland used to eat a lot of it, mixed it with raw eggs from his own small farm. He never got sick. There is some risk involved, but it's really blown out of proportion.
Don't know too much about the French version. But for example our Czech version (tatarský biftek) is seasoned much more with salt, pepper, paprika, ketchup, worchester sauce and a lot of other stuff. The meat is also shredded to very little pieces and then mixed with onions and egg yolk. And finally put on toasted bread. The Korean version on the other hand is very bland, pretty much only meat, sesame oil, sesame seeds, soy sauce, garlic and sometimes egg yolk. And the meat is not shredded. Instead, it's cut into thin 0.5cm x 5cm long strips. It's very different experience and very different taste.
I guess the seasoning depends on the country and the taste of the person :) Personally i use just onions,salt pepper and egg yolk and put it on a sandwich- i know that why since my childhood :)

Also, the french version tend to use cuts like loins and cuts usually used for steak while koreans don't prefer the taste of fat for tartare so they prefer to use cuts around the flanks and shanks. French tartare tend to use a wide variety of seasoning all depending on the region where it's served but korean tartare is served simply mixed with tiny bit of sugar, soy sauce, sesame oil, and salt.

I feel like the Koreans are doing beef right. Consuming animal flesh should be a special, gourmet experience from local animals that are treated well. Not the mass-produced factory farm crap found everywhere for cheap in America.

Never do that because you can get salmonella, but most other meats are perfectly safe as long as they're fresh! Especially beef. It's common to eat steak rare where most of it is uncooked anyway and it's very rare for anyone to get sick from it.

Simon, have you had Polish 'tatar' back when you went to Poland? It is raw beef as well, but finely chopped, seasoned with salt and pepper and served with egg yolk, finely chopped onions and pickled cucumber on the side. You mix it all together before eating. Very traditional.
we have a similar dish in Ethiopia- you take raw beef (no fat and very finely chopped) and you season it with spiced butter. I used to avoid it when I was a kid, but now I love it! It's interesting how you said raw beef in Korea is for old men- in Ethiopia it's more a dish for adults in general, and not kids (though there may be some kids who do eat it).

The best place I've ever been to for beef in Korea is near 신천역. The restaurant is called "늘푸른목장." Not only is their 육회 great, but their grilled beef is wonderful (they use an amazing marinade) and they make the best 됀장찌개 I've ever had. If you're ever in the Jamsil area, be sure to check it out!
Back in the 90s there was a Korean restaurant that serves Korean raw beef. But they have since retired and it is so hard to find any that serve raw beef in the past 15 years in the SF Bay Area.

This looks really good! I'm from the US, but I've had raw beef before even though everyone thinks you'll get sick from it. I guess it's because the Lebanese side of my family eats it. It's called raw kibbeh (yeah, there's a cooked version just called kibbeh, and there are different spellings of kibbeh if you get confusd). But it normally just has seasonings and then maybe like olive oil, and it looks more like what you were describing with the picture of the Korean raw beef with the egg, where it came flat on the plate like that. We use the flatbread or pita to scoop it to eat it. It's pretty yummy, but it was definitely something different the first time I tried it.
theres one similar in Czech Republic!! Tataracek, its like that but also has a raw egg on top and you mix it, you get bread on the side and raw garlic that you put on the bread, its amazinggggggg
where we live it's called Steak Tartare, and I absolutely love it. Here we always have it with the eggyolk like Martina said, which in my opinion makes it even better. Along with it we eat chopped onion and capers, but actually that's your own choice. I don't like the capers and onion in mine, so I leave them out. Looks delicious anyways! :D
Makes me look forward to having "Mett" when I visit my family in Germany over Christmas. It's raw, minced pork, spiced with salt and pepper and usually with mixed with raw onions. So good on bread or rolls~
I've had 육회 for anju a couple times: after every shot, we'd each have a small strand of 육회. the self-control that is needed for this is intense. otherwise, it would be finished within a half-second of being served. it really is expensive, but hella delicious

America has raw beef but I think the people here aren't as used to the idea and there are usually a lot of new stories about bacteria/virus contaminations, so people think they always have to have their meat full cooked. The beef best suited for eating completely raw is also super expensive. Combine the price with the reluctance of most Americans to eat is raw means that it is usually only found in really high end restaurants. Ironically, rare to med rare steaks are cooked to about 130-145 F which is not enough to kill bacteria (160F ish)
Never knew beef is that expensive in korea. Now the prize of winning packed meat at weekly idol makes a lot more sense to me. Always wondered why the idols were so excited about it.

Burnt to smithereens is no way to eat meat and actually charred is a carcinogen. It is not unsafe to eat rare or even raw meat if sourced correctly.

+Yukine Sekki I wouldn't use the word "everywhere" but for sure other countries do this too! I think raw egg and raw meat is still pretty taboo in Canada and USA unless you really really trust the place.
+Simon and Martina Steak tartar used to be popular in North America (and everywhere else) in early 20th century, but then it fell out of fashion. Like so many foods! However it still remains fairly popular in Europe.

+Simon and Martina I love the steak tartare in bodega, which is a small French restaurant on Baldwin street, Toronto... And if you eat horse meat, the horse tartare in black hoof is even better. When you're back in Canada, you should definitely check those out.

I'm from the US, but I've had raw beef before even though everyone thinks you'll get sick from it. I guess it's because the Lebanese side of my family eats it. It's called raw kibbeh (yeah, there's a cooked version just called kibbeh, and there are different spellings of kibbeh if you get confusd). But it normally just has seasonings and then maybe like olive oil, and it looks more like what you were describing with the picture of the Korean raw beef with the egg, where it came flat on the plate like that. We use the flatbread or pita to scoop it to eat it. It's pretty yummy, but it was definitely something different the first time I tried it.

theres one similar in Czech Republic!! Tataracek, its like that but also has a raw egg on top and you mix it, you get bread on the side and raw garlic that you put on the bread, its amazinggggggg

where we live it's called Steak Tartare, and I absolutely love it. Here we always have it with the eggyolk like Martina said, which in my opinion makes it even better. Along with it we eat chopped onion and capers, but actually that's your own choice. I don't like the capers and onion in mine, so I leave them out. Looks delicious anyways! :D
Makes me look forward to having "Mett" when I visit my family in Germany over Christmas. It's raw, minced pork, spiced with salt and pepper and usually with mixed with raw onions. So good on bread or rolls~

I've had 육회 for anju a couple times: after every shot, we'd each have a small strand of 육회. the self-control that is needed for this is intense. otherwise, it would be finished within a half-second of being served. it really is expensive, but hella delicious

In France it's a classic for us to eat "Tartare de boeuf" : raw beef with a raw egg on it, mustard, onions, capers, salt and black pepper and parsley.
America has raw beef but I think the people here aren't as used to the idea and there are usually a lot of new stories about bacteria/virus contaminations, so people think they always have to have their meat full cooked. The beef best suited for eating completely raw is also super expensive. Combine the price with the reluctance of most Americans to eat is raw means that it is usually only found in really high end restaurants. Ironically, rare to med rare steaks are cooked to about 130-145 F which is not enough to kill bacteria (160F ish)

Never knew beef is that expensive in korea. Now the prize of winning packed meat at weekly idol makes a lot more sense to me. Always wondered why the idols were so excited about it.
finally something that looks suuuuuuper good. I wish we could get raw beef around the states, you can get it cooked 'raw' so its seared on the outside in the south but i cant even get a super rare stake in NY with our regulations :(
