I made the pumpkin chili tonight and it was DELICIOUS! My husband is a really good cook and we like to discuss how we’d improve a dish while we eat it for the first time, but we had ZERO notes on this one! It’s perfect as is, and it was so easy. It’s going in our regular rotation. I want to try the drumsticks too! Thanks for the great ideas; seeing you make it gives me confidence that I can do it too :)
I struggle to come up with meals for me and my husband, hardly feels worth it to cook for 2 people more than 3 times a week. Weaving the meals into each other is a wonderful tip, can’t wait to start my list of meals we eat !!
The best thought out, planned and edited video I've watched since your last one! I LOVE how you "piggy back" one meal off another! And I am definitely going to make meatloaf sandwiches that way next time it's on the menu! One quick helpful hint I make use of: when I plan out my menu and post it on the fridge, I always write the meat I need to take out of the freezer to thaw the morning before...for example, if we're having meatloaf on Wednesday, I will make a note on Tuesday to take the hamburger out to thaw for tomorrow. Keep the fantastic videos coming! You are a-DOR-able!
One thing I learned running a cafe kitchen many moons ago - people who like onion, like onion. Also, so many thank yous for your content. I have MS and epilepsy and it helps me to undo my troublesome brain (and troublesome house). 1000 thank yous. ❤🙌

Best bacon hack is to throw the whole pack on a foil-lined cookie sheet and toss in the oven at 400 degrees. Done in 15-20 minutes with way less mess! 😊
And don't forget to strain & save that bacon grease 😋 I call it liquid gold & use it to fry eggs & add a little to some chicken recipes in the crockpot/instant pot or to grilled chicken. It adds so much more flavor!
I like how you made the meatloaf into more meals. It seems to me that whenever I make meatloaf though, no matter how much I make, there are no survivors for leftovers anyways. But I will definitely tuck these 2 recipes in the back of my head for one day when the starving boys are off to college and it's just us again 🥰

Haha! I know what you are talking about with those onions! I used to hate them as a kid, but now I'm adding them to every meal that is not soup. Also I love tomatoes with onions, salt, pepper and a little vinegar or natural joghurt!
Great ideas! Love how you walked us through an entire week. We have a few local stores that offer $5 rotisserie chicken and I’m always repurposing those leftovers to keep dinners easy and interesting!

He loves eating the same thing over and over. I don’t. This made me rethink the process though. Recycling leftovers would free up some serious time. The meatloaf got you 3 days from I day of serious work. That’s success in my life. I wish we lived next door. You are so much fun!!!

Meatloaf sloppy Joes and meatloaf chili are really good uses for leftover meatloaf, too :) You can also fry it up and mix it with scrambled eggs. Just in case you need more ideas.

My mother in law got me that Jessica Seinfeld cookbook if recipes she made for her kids where she hides veggies in it- very good recipes! As I live alone and still cook for 2 or 4 as the recipes are laid out for that many, I freeze meals and yes, I do eat another portion of that dish usually in that very week - I am not as strung up about repetition. But when I cook I usually try a new recipe. Not only is the internet so very helpful (you can search for ingredients you have and want to use) - I also have loads of cook books from pre-internet times. Yeah, I am old.
I’m a big meal planner too. In fact I plan breakfasts, lunches and dinners including dessert. Having a big family, I’m in the kitchen a lot, but when you love to cook, it’s my happy place.

“Copy me that” is my favorite online recipe tool. You put your recipes in and then select what you want to eat on which day. Then it makes a grocery list for you and you can just check off what is already in that pantry. It’s a time saver 🤗

Love your videos! I found your cleaning videos and became hooked. I am a seasoned mom but it's nice to see what other mom's do, and you are doing a great job! May I make one suggestion as a foodie, a home chef and a meat loaf lover? No matter how you season your meatloaf, it is important to use one egg per pound of meat if you want a more tender meatloaf. Not enough egg will make it tough and hard to cut.
Years ago, I didn't have any crackers or bread crumbs, so came about my Mexican Meatloaf. I added crushed tortilla chips, chili powder, garlic powder, cumin, onion, cheddar cheese, hotel, tablespoons of salsa or rotel, egg & ground beef. You can put Enchilada sauce & cheese on top or omit salsa in meatloaf & put salsa on top with cheese.🎉
I love your videos. One thing I learned about, from my daughter, was frozen chopped onions. I am a vegan and make bean and rice dishes. Almost everything needs chopped onions, and that is one step I can skip. I just measure them out, and go.
Tip for making meatloaf... use a large oven-safe pan (like cast iron) and shape the meatloaf into a giant ring/donut shape. It cooks way faster that way and you can still slice it for sandwiches next day.

I use Heinz 57 in my meatloaf with egg and breadcrumbs, and of course I chop onion for it too!! Seasoning and bake, I put a little Heinz on the top for the last 15 minutes in the oven. My mom used ketchup, I kicked it up a little. Love the videos, thank you!

I made the chicken pumpkin chilli. It was so delicious! We definitely want to have it again. I did make it a little different. I had no onions, bellpepers, or garlic so I used onion powder. For beans I used home canned kidney beans and bean soup. I put in the cream cheese instead of the coconut. Thank you so much for sharing! I can't wait to try the drumsticks recipe.
try making spaghetti sauce in the pressure cooker , add some grated celery carrod or blend it so its hidden, garlic, beef stock, tomatoes. and cook it for the medium time for meat. its so delicious. you will love it. plus you can put it on when quiet during day and it keeps warm, use the leftovers to make a lasagne dish.

I love the idea of making the pumpkin chili recipe but vegetarian. It's easy enough to substitute fake ground beef for the chicken, but i guess I'll try sauteeing it initially with the onions and peppers. Excited to try!

Thank you that you shared the organised mom method in your last video. I haven’t head about it but it is really helpful for me. I do some adjusting though e.g the dishes every day and wipe the kitchen counters etc and not always by the timer because I can’t not finish by the sake of my life I need to end the things when startet.🤣🤣🤣🤣 But it will get less work over the time I think.

I learned you can mix the flour with the egg(add a little water) coat chicken then in the bread crumbs..eliminates one of the bowls and works great😊

Looks good and yeah when things get hectic waste in the fridge happens. Keeping the chicken bones for soup is good.

I love the idea of making the pumpkin chili recipe but vegetarian. It's easy enough to substitute fake ground beef for the chicken, but i guess I'll try sauteeing it initially with the onions and peppers. Excited to try!

Try cooking the onion in the worcestershire sauce. It's so good. You can add other diced veggies too.

Thank you that you shared the organised mom method in your last video. I haven’t head about it but it is really helpful for me. I do some adjusting though e.g the dishes every day and wipe the kitchen counters etc and not always by the timer because I can’t not finish by the sake of my life I need to end the things when startet.🤣🤣🤣🤣
But it will get less work over the time I think.
