I can share, being living here in Italy, authentic pasta (vegetarian) which people here locally cook involves: 1. Boiling the water + addition of pasta afterwards and sprinkle salt + 1/2 spoon oil. 2. Add the pesto sauce with the same water from pasta 3. If don't have pesto; Gravy (meat for nveg, otherwise same tamato gravy) 4. Mix them up and along with sprinkle of aged parmesan or parmegiano cheese. 5. Pepper+origano +olives as per requirement.

Mixing milk based sauce with tomato doesn't sound good. Though tastes great! People say milk n onion should also not be eaten together as it's bad for health. That's why I love chef ranveers recipe. Easy and tasty!

@sheldon pereira One myth seem never seem to go, oil while boiling pasta, oil and water never mix and oil floats on top. drizzle oil ( preferably Olive if you like that flavor in your final dish). That serves the purpose of keeping them separated and not stick to each other into a lump.
Al Dante- Personal choice... Also, use Italian imported pasta(it's not overpriced), its better, more firm and less starchy and has a nice bite even without Al Dante... I also cook it longer Olive oil: You don't add oil to boil packed, dry pasta, If you make fresh pasta like me (sometimes) then add olive oil, that too can be avoided If you use Italian imported pasta, Then please do wash it in cold water if you make a non-milk based sauce

@ChefRanveer, let me give you a tip to cook tomatoes faster when making pasta ;), while boiling pasta, boil the tomatoes together (you may also boil other veggies like sweetcorn and babycorns) yes tomatoes get blanched but the gravy's consistency and flavour is really better - try it once

I have always read and seen that we shouldn't use oil while boiling pasta in water. But you have used a decent quantity of it. Why is that?
@@utubeac09 you're correct. Oil in the water is unnecessary, so is washing pasta. As long as water is in a roaring boil with decent amount of salt, that's all you need.

Hi Ranveer Tried pink sauce with ur style & pink sauce with white sauce too. My husband & I made tried both the recipe but he could not identified the difference. It tasted almost same. Hi Ranveer. Loved this video and used it to cook pasta for my friends. They all loved it. You talk about the gluten percentage in Indian wheat. Since Italian wheats used to make pasta typically contain 12% gluten, and Indian wheats generally range around 6% gluten with Sharbati having the highest gluten percentage, why do Indian manufacturers still make pasta using Indian grown Durum? Wouldn't it just be better to use Sharbati instead? Your knowledge of the science behind cooking is amazing. Please try to respond to this message if you can. Thanks.

To prevent pasta from sticking to one another.
I haven't seen it sticking. In fact what I read is if we add oil, the sauce doesn't stick to pasta that nicely.

Tried pink sauce with ur style & pink sauce with white sauce too. My husband & I made tried both the recipe but he could not identified the difference. It tasted almost same. I loved this recipe easy & tasty. I always use to blanch the tomato- time consuming method.

You talk about the gluten percentage in Indian wheat. Since Italian wheats used to make pasta typically contain 12% gluten, and Indian wheats generally range around 6% gluten with Sharbati having the highest gluten percentage, why do Indian manufacturers still make pasta using Indian grown Durum? Wouldn't it just be better to use Sharbati instead?
