Can I just add beads to the string the doll has already? Like just half way?

Definitely yes. Just untie the knot at the end where the last charm or bead is and add more. Note: you may be forced to cut the end it it is glued. I always glue mine. So, once you add more beads and tie a new knot, your string will be shorter.
