    I had never tried green onion pancakes, and anticipated trying your recipe. I had a lot of difficulty making these. Today I watched a few green onion pancake videos from other chefs. Your recipe specifies 8 pieces of dough, unless I'm mistaken. Other chefs make a similar quantity of dough for 2 pancakes. That would be much easier.
    All your other recipes I've tried have been wonderful.

    Your Coconut Sriracha is the BEST dipping sauce I never knew I needed. I will never buy regular Sriracha again. I use it on eggs, McDonald's French fries, pizza, pretty much anything ❤️

    I'm obsessed with scallion pancakes, I always have a couple in the freezer ready to go. I've been making them for quite some time but not with the double fold - I go straight with the oil and scallions step and clearly I've been missing out on the extra flakiness. Won't happen again ;

    • @anne5761

      @@RoyShay not the original commenter but for me I brush it super lightly with oil and freeze. Works super well, just make sure you use parchment to separate the frozen pancakes or else they will stick.

    In my experience in the US, only the best Chinese restaurants pan fry them. They are often deep fried and greasy. Best bet is homemade. Second is frozen which are often good. I'd hate the idea of someone's first experience not being delicious.

  • @slimmette
    @slimmette 5 лет назад +1

    I like your other recipes but this one seems off, I’ve been taught to roll that first layer really thinly so the diameter is more like 12-14 inches at least, then brush the oil and sprinkle the scallions. Also, one tip is to scrunch the pancake with tongs as it cooks so it sort of fluffs the pancake up with air pockets to make it even crispier. The homemade ones we make are thicker/flakier and not as flat. Amazingly a good recipe I use is from the Mazzy Show on RUclips.

    • @MaZEEZaM
      @MaZEEZaM 4 года назад

      The ones I have seen are scrunched with your hands like a clap together right after its cooked, no doubt you would need tough hands though given it will still have hot oil on it.

    • @MaZEEZaM
      @MaZEEZaM 4 года назад

      Yes, I was thinking that though in that case its a FAR thinner stretchier dough and would likely have Many, many more layers.

  • @jncchang176
    @jncchang176 5 лет назад

    How do you make the scallion cakes extra crispy after freezing? Mine are sticking to the pan. Some fluff up, some get real black and soggy.

    • @MaZEEZaM
      @MaZEEZaM 4 года назад

      I find dough doesn't freeze very well for me, usually turning black so I tend to avoid it. The way that dough comes together and becomes stretchy is that the gluten in the dough binds together creating stretchy links, the way freezing effects food is that it forces the moisture in the food to expand and solidify and then when warmed will suck back in some of the moisture and shrink but I think in that process probably damages and breaks the gluten strands. (Theory as a person with very little scientific knowledge on the subject so please someone correct me if I am wrong)
