    Thank you for great demo on rosti cooking. I'm definitely going to give it a go. I did have to chuckle when you said it was cooked in 'no time at all', but it was positively sunny when you started and dark at the end :)

    FYI: The original Swiss 'rösti' is pronounced a bit like 'rirsty' so that it rhymes with 'thirsty'!

    Large par boiled potatoes , with their peel, .cooled and left in fridge overnight are the best for this recipe .

    If you use ghee it won’t burn
    (But always finish with butter because it always tastes better)

      No, obviously he was grating raw potatoes given how wet they were. Classic Swiss Rosti is made from boiled potatoes that are allowed to cool overnight and then greeted. also cooked in a lot more fat than he was using. And they use a clarified butter or ghee and not regular butter.
