As a Gold former Katarina main with 450k Mastery Points I may be able to answer you. Yes there are some unfavorable teamcomps for Katarina, but the crucial point to winning a game like that depends entirely on you. You need to find a place and time to go in during a Teamfight. If you kill their carries without them reacting to it, you're fine for the rest of the fight. Head back to check on your ADC if necessary. Do not die at the start of the teamfight at all costs. You're the one who's supposed to clean up. Another thing is, call shots and tell your team to group and push whenever possible. To win the laning phase against champs that counter you, either wait for the Jungler, or roam to bot to pick up an easy double. Try to make your roam paths unpredictable and away from enemy Ward vision to pick up an easy kill. If you can, ask if their bot laners have their Summoner Spells up. If you force a Flash and get killed it's not worth it, so you need to be prepared for in case they do flash. Last Note: Don't get greedy. Calculate your damage, if you Shunpo onto a Bruiser or Tank and you blow all your burst abilities on them without killing them, your chances of survival are pretty slim unless you have your team backing you up. Then beat him... In this video I saw: eight dot knows exactly when to use which spells. Saw him rarely wasting ults, actually can only remember 1 ult he wasted half, thats it. He exactly knows the boundaries where to wardjump etc., exactly. All these things are hard to do and he does them without any decelaration. Your "q e w r"- combo Kat would've missed many kills due to wasted ults and/or opportunities. I can't speak for his general play, but the play in this video was definitely over very good. Kata may not be mechanically hard, but the gameplay knowlegde, reflexes and decision making was awesome.
