Au Gratin Potatoes
2 russet Potatoes, sliced thinly
1/2 onion sliced thinly
salt, pepper, garlic
2 T. flour
1 T. butter
1/2 cup shredded cheese
2/3 cup cream or half and half
400. 40 minutes
Apple Crisp
2 apples cut thin
1/2 t. vanilla
1/3 cup brown sugar
1/4 cup flour
1/4 cup oats quick or old fashioned
1/2 t. cinnamon
2 T. soft butter
1/4 cup pecans or walnuts,
375 30 minutes

Ms Lori, I just wanted to tell you that you helped me through a very difficult time this past Sunday night. I was awaiting very serious back surgery and was quite nervous. I tuned into your RUclips channel and marathon watched all night (between cat naps). I knew your soothing voice and cozy home was just the medicine I need for my frazzled nerves. I'm glad all went well! A good friend of mine had back surgery this week as well, and she went home yesterday, too. I pray that you heal quickly & are feeling better than before surgery. Take care!

Love this! According to the 2020 US Census, there are 22.5 million empty nesters. As a widow I love recipes for two people, because it allows me to freeze the second serving, which means less food waste, and a lower food bill.😃
Or. Excellent leftovers for the next day! I only freeze when I make a big batch of soup.

Being a widow with no family now, I only cook for one. This meal is perfect. Love every bit of it! I struggle with cooking too much food. I have looked thru several cookbooks for two, but they were not country food or farmer/rancher type meals...none would have pork chops, potatoes, cucumber tomato salad, with an apple crisp. Yes, cooking for two cookbook! Please show a photo of the willow tree growing!

We love your cooking for 2 ! For us it’s a matter of not needing more food than an appropriate size portion. Unfortunately if there is more left over, we are going to take 2nd helpings when we really don’t need one!

❤️Really loving these cooking for two recipes! I always cooked family size meals and also ate left overs all my life. As I am aging I don’t enjoy eating the same thing for a week and some things I don’t really enjoy after they have been in the freezer. Thanks for sharing these smaller sized recipes.

THANK YOU for your recipes for 1 or 2. I hate leftovers and it is just me. I cooked a roast Sunday, and I am so tired of roast beef. Today, I put carrots, potato, and that was my lunch today. It is hard to cook for just one person, even desserts. I really appreciate your small recipes because then I do not eat leftovers for 3 days. LOL I did freeze some of the roast, food is too expensive to waste. I enjoy watching your videos so much. I am a diabetic and I love ramakins for portion control. I made cornbread today and made cornbread even in 2 of them. It is really hard to use a recipe because it is made for families.
It is also oldies like me who have been cooking for a crowd and now find that that time is over. Just cooking for me now.. Really love these recipes. I have been known to cook in "batches" and freezing some but it gets repetitious really quickly. Thanks so much.

Lori this was a great video for me lost my husband last year and trying to cook for one is very hard. Was always a cook for my family and after he passed lost the will to do it, went out a lot for my dinner but that gets old. Trying to get back to it just bought a mini instant pot so will be learning how to use it wish me luck 😊🙋🏼♀️

@@jtharp9265 thank you. You stay safe in the extreme heat too. Fortunately, in my area, our humidity in usually quite low so I’m not experiencing the heat index extremes like you. Tomorrow cold weather is moving in…the high is only supposed to be 95! 😂 But I’m thankful for it!! It’s not supposed to last, however, and will shoot back up to the mid100s for as far as my local weather channel is willing to forecast.

@@suejohnson3972 too hot!!!! The Texas panhandle hasn’t been as bad as that. I think 108 is the highest we’ve had so far. I think we’re cooling into the 90s in a couple of days. So thankful!

Our oldest moved out 5 years ago and the youngest left a couple of years ago. It can be a real struggle learning how to cook for 2. I was cooking for 4 (3 of them males) and enough for all of us to have leftovers for lunch. I am loving your cooking for 2 videos.

I made a double recipe of apple crisp a couple of weeks ago. We had a bunch of apples that I needed to use up. Well, I divided everything into two 9 inch square pans and those apples cooked down so much! It was good, but definitely more crisp than apples. My husband asked me if I wouldn’t mind putting some apples in the apple crisp next time. 😂🍎🍏

When it was just my husband and myself for ten years I became the casserole queen. We like fresh food and not frozen. I would go to the market after deciding what recipe to make, spend a half day on my day off cooking and we would have lunch and dinner for the week. I used a 13 x 9 inch pan and that was perfect for us. We went out to eat on the week-ends.
Lori, I absolutely love watching your videos. Wish we lived closer, I'd love to be able to sit down over a cup of coffee or tea and just get acquainted. AND, I agree with Jackie Little..... your next cookbook needs to be your cooking for 2 series.
