Mayo, a little onion, diced tomatoes and horseradish makes a delicious sandwich and helps take the curse off tuna if you aren’t really crazy about it. Regrinding after 24 hours...that's a new one for me. I would be concerned about oxidative color change as well as heat reduction, unless you had previously added vinegar causing mild heat but protecting from color change.

If you grow it make sure it is contained cannot get rid of it once it takes root. I remember just a little less water and double the vinegar I supposed it is a matter of taste. I use a lot of horse radish to make the sauces like cocktail sauce, and dipping sauces for fish mayo, tiny amount of mustard, dill relish and horse radish with splash of tobacco or serachi. Makes a nice dipping sauce. It would behoove me to be making it myself specially with all the shortages at hand. Thank you for sharing.

Bring it home clean the outside without peeling it and submerged it in water after it’s been in the water a few hours, cut it if needed put it in the quart jar fill it with water put it in the refrigerator. When you want to use it which I do every day on everything clean the outside of the route so you have white root and just graded with a fine grader on whatever you want the longer you let it sit the strong stronger and more potent. It will be. It’s wonderful. Enjoy it. 👍
Excellent, now that stuff actually grew this year in my garden, l may try to grow some, one time my wife's aunt gave us some on Christmas eve, l thought l was (Sea Biscuit) the horse, my nostrils were flaring my eyes were tearing and they were eating it like it was nothing.

Thanks for this great video and the memories it brought!! I love horseradish and I grew up eating it. We would use it with meatloaf and beef pot roast. I planted some about two years ago unsuccessfully - must have been in a bad spot. I will try planting it somewhere else in the spring.
We always used the finest side of the box grater as well. The waxed paper is to hold the horseradish under the vinegar so what’s on top doesn’t dry out and turn dark. We used to sometimes melt paraffin and pour over the top to seal it. We did the same to jelly when using baby food jars. Kept out the air. When you go to use you would just take a knife to slice the wax in half and take it out.
Good video, should have used the water from the soaking roots to loosen up the mixture in the processor though. Can’t wait to dig mine up and make some to go along with Thanksgiving dinner’

Don’t want to gas myself out! How did you know I did just that earlier this week when I was processing my harvest. The hospital grade goggles and mask I tried to use to prevent that did nothing, but my sinuses were sure cleared and my resulting horseradish purée was eye-wateringly delicious. I put some in mashed potatoes I made later that day, but I will try it in gravy next time.

I never seen them can it Penn. I believe they put a lot of vinegar on it when they stored it in the basement, but I don’t know exactly what they did. I believe the heat of canning it would destroy the flavor, just from my experiences cooking with it.

Hmmm, that was interesting. The only thing I absolutely know I eat that has horseradish is remoulade sauce. Know of any medicinal uses for it? If its really pungent, must be good for some medicinal purpose. I'm having flashbacks of onion&mustard chest packs. 😖🤒

I'm LOL, I'm only one that eats it, but I mix couple tablespoons in meatloaf mix! My guess love the meatloaf and have no idea it's in there!
If I get my hands on some more horseradish I will have to try this. With store bought horseradish I made some fire cider this fall.

In the freezer it will last a year or more. In the refrigerator it will last six months. It gets weaker as it ages.

My grandma used to punish my dad and his siblings by making them sniff the horseradish. It’s the only punishment she ever used.
