    Watching this one back, I can feel the tiredness in my voice as I kicked off this video. Sometimes the homestead project fills me with excitement and hope and other times the amount we have to do can feel super overwhelming. The morning we started filming this was definitely the latter. I'm so tired I even said it was 50 degrees and frost and what I meant was 40 degrees and fog, but honestly, it was far more an issue of my exhaustion and mindset than the actual weather. Luckily this day brought me back to life. Time outside as a family, watching projects get checked off the list, and most importantly getting my hands in the dirt and harvesting our first potatoes.

    We live off grid in North Idaho and have since 2016. Just some “wisdom” be patient because everything takes triple the amount of time but know that you and your precious baby boy will profoundly BENEFIT from this lifestyle! Stay strong! Enjoy it ALL!     We live in upstate NY. Usually we get our first frost by Mid October, Snow by mid November. Suggestions would be invest in a roof rake- to help remove snow from your roofs. Have your wood moved closer to your doors so you don't have to run out and around the containers to get to it. Have your tractor serviced now and lubed/oiled up. Can, can ,can as much a
    You can of your garden stuff. Dry and package anything else. Last winter was not typical of the amount of snow we get. Forecasts are predicting way more. Enjoying your content. Praying for you all.

    You are both so resourceful 👍🏻 Just curious if you have considered closing in the space between the bedroom container and the kitchen? It seems it would make a great space for eating meals, provide a sitting area (living area) and space for Max to play. 😉

    He will love shoes and hats when they become useful to him, Meaning he gonna recognize the difference it makes in winter and love them. So far they have been a hindrance soon it will be welcomed.

    Hey Dana, As someone who is 5 years into living in a tiny house and for 2.5 years with our little one in there too, just know it will be well. They adapt. I can't see a toy space for max in the videos so I'd suggest a small wooden shelf in the kitchen and bedroom rooms with different open ended toys on there. He's at the age now where he'll start being more self directed and you both can just move between the spaces. Also hats, warmth etc is just a boundary that you lovingly set and he will get used to. I think with parenting the thinking about the upcoming stages is harder than the actual stages. Once he's up and walking it'll be much easier moving between spaces. xxx

    In the Netherlands, we actually eat quite a lot of kale in winter and it's supposed to be sweeter after some frosts! If you have kale and potatoes - you can look into making "stamppot", it's a traditional Dutch winter meal that just uses kale, potatoes and onion

      @@ariellesoullighting4309 stamppot or kale stamppot (boerenkoolstamppot in dutch). Literally translated, stamppot means mashed pan/pot. You can have lots of versions of the recipe, for example, last week I had a stamppot with sweet potato and green beans :)

    Our kale keeps on going strong all winter, even during and after snow. We just cut off the branches we're going to use and let it keep growing. Nature is so amazing! Oh, and the winter lettuce we planted kept going throughout the winter and well into spring!

    The winters are tough in upstate NY! We have more cold days than warm days..and the days get dark sooner...I often say upstate NY is not for the weak..having warm clothing, warm and cozy surroundings is a must....you might want to think about a seating area in one of your containers because it will make things a little cozier and warmer for the winter months.......after a couple of years you do get use to the cold season!

    If you have a surplus of potatoes, onions, and carrots, you can store them in dirt-filled crates. They stay in the dirt through winter, and you only take them out as needed. (per The Elliott Homestead). Have you thought of covering your vegs overnight?

    Can I give some advice on the potatoes!! Don't take them out of the soil. let the plant naturally ripen the potatoes. Get some good frost on the plants. That will help the ripening progress. Once the plants leaves start falling and the stems start collapsing, take a spade and add some soil on top of the rows and leave till the soil is getting to cold. ( 4 to 5C.) Harvest the potatoes. Make sure the potatoes are completely dry after harvesting. Do not wash the potatoes. Do not let them lie in the sun. Store in a cool, dry and dark space. Cheers. Willie from South Africa.

    I lived on a boat for many years and we also have a place in the Catskills with no heat ! my oven was my best friend and the old trick of clay pots and a candle does work in small spaces, putting bricks in the oven will help hold the heat when the oven is off xx

    I don't know if you have had frost yet, but watering down the plants early in the morning to get the frost off the leaves before the sun hits them can save them during the early frost days. Love watching your journey!

    Ah, so beautiful... I love your morning till night feeling of this video :) All the things that come up as worries, concerns, thoughts, and then the simplest things, sleep, good food, and it all changes. It's a big deal what you guys are doing, starting a whole new life on the land, and a new growing baby.     Wow! Imagine how plentiful the garden will be when you guys are able to get an earlier start! Amazing how many potatoes you got already. It’s a beautiful thing to share this process with Max and for him to see where his food is coming from.

    Relax and enjoy your home. Children who grow up in nature are so much more enriched. I raised a child in a log cabin up in Alaska. The wood stove is your security. As long as you have a good supply of wood and food, you can weather any storm pardon the pun. Your wood stove can be used for cooking in a pinch and will keep you toasty warm. Max will learn to love getting bundled up and playing in the snow, and will sleep better for it! So just relax about it all. As long as you have love under your roof you will all be fine🥰

    The door and window frames look great really makes the door pop! Wow such a great potato harvest from 1 plant well done, Ive grown baby new potatoes in a growing sack but not bigger ones. So cute with Max helping with the cookies and eating them x

    Something you could try for winter time is a tarp and some heat lamps to help your plants last longer

    Loved this video! Seeing the potatoes, the kale and lettuce was so exciting. Dana you continue to amaze me with the meals that you whip up.     I’m not ready for winter either. This high school sewing teacher finds “back to school” to be a massive adjustment. Then comes the shorter days just as I am scurrying around like a squirrel gathering nuts trying to squeeze in the last few weeks of wild swimming, bike riding, outdoor skill toy fun, and evening walks with my dog. The garden is almost done and so is most of our preserving and canning. The root cellar is full (love it!!), the pantry is stocked and hay is in the barn, but there is still more to do on the winter woodpile. It is such an adjustment to shift from full busy days outside to slower days spent indoors. With that said, I recognize that this is nature’s cycle and we must fit into the rhythm of the seasons. I’m going to watch this video later this evening when I can put my feet up and enjoy seeing what’s happening on the land in your neck of the woods. Right now it’s time to do some zucchini baking (cakes, muffins, and the like). We are seeing lots of bears, deer, and foxes on the move as well as mice and squirrels scampering to come indoors… I feel like soon we’ll be doing this too, don’t you? Happy Autumn to you and your family, and thanks for another awesome video. PS - I just recently turned 60, and I find my enthusiasm for winter to be less with each passing year. In an effort to embrace winter and not grumble about it, this year I am going to look for the positives that come along with the frosty season. Stay tuned… more to come on this subject. Ⓜary🇨🇦🍁🍂

    Keep in mind you thought it was difficult and sometimes unlivable being in the shipping containers in the Summer but you got through that and found a way to make that work so you will do the same in the Winter too. Every new stepping stone requires some adjustment but with you both having such a positive and optimistic attitude when embarking on everything you do you'll find a way to make it comfortable and make it work!
    I also must tell you each and every week I look forward to your videos, they put me in such a zen state and I get so much enjoyment from watching each stage of this new phase that you're going through with your shipping container endeavour, and the simple way that you live your lives is to be upholded and admired, so thank you for all that you all do!
    The sheer and utter joy you showed from such a simple thing as growing those potatoes was just a beautiful special moment, and it's things like that that bring me back each week to watch the next installment and see what adventures you've tackled and conquered. Thank you for sharing that with us all and allowing us to see the progress, it's beautiful!

    Boots. Boots are the answer for his age bracket. They can pull them on and off themselves, which jives with the fierce independent streak of 18 months to 3. Also, if his ticket to freedom outside is boots, he will learn to love them fast. Now the hat thing, not so sure. 😂

    There are reasons living in shipping containers is not typical. Needing to go outside to get to the kitchen or bathroom or living space is inconvenient at best. I like your content and admire your work ethic.
    Sometimes it seems that you make life choices that might make better "content" but not necessarily be best for actual living. Imagine how nice a house you could've built more traditionally with all the work you've put into this project. Best of luck to you both.

    Sometimes if the frost isn’t to severe you can cover the plants with things like old blankets over night to protect them ❤ hope this helps you on your garden journey

    Bravo on everything you are accomplishing and have already accomplished! I am awed and humbled to watch the process. Thank you for sharing it with us.
    If you are planning on building hoop covers for your garden beds, the gardening channel with James prigrioni (I think that’s how you spell it, but I might be wrong) has very detailed videos plus supplies list for how he makes hinged tops that swing open. He gardens in the city in New Jersey, and has fresh greens into November.

    Curious how you are planning to navigate the winter. The tub and shower are outside and the bathroom is away from the containers. You mentioned last year that it was difficult to navigate the road to get up to the containers. Would love to know how the winter will overcome some of those challenges.     can you make Kale chips or dry the Kale out to use later? it seems like you'll have to harvest it all before snow comes to enjoy it, but storing it is tricky.

    Food growing addict here...once you start it is totally addictive, each year I try to build in more self sufficiency eg, i started with greens, now have quail, chooks, sheep and grow microgreens and sprout, plus this year I'm adding sweet potato and zucchini, my one bit of advice is build up slowly each year or it can be overwhelming

    First frost wont damage the potatos in the ground, just the plants on top. some folks store their potato's in the ground in clamps.

    Don't you guys have mini splits in the containers? They keep you cool in summer and warm in winter. Also why no chairs? Highchair for Max? You need to make it more hygge inside. Soft warm fluffy rugs, cushions, throw blankets. You can make it!

    Yeah, trenching the bottom of a rise with a row of trees which will dump all the rainwater there, probably not the best idea. I hope it works out, but winter is always the hardest on any outdoor living we do.

    I had the same urge this morning when the whole flat was surprisingly cold I have to bake something! 😂
    I dont have kids but my cats basically live only on my carpets in winter they also arent a fan of socks haha.

    I'm surprised you haven't built a large fenced-in area on the grass for Max to play in when you're working outside, so you don't need to carry him all the time. He needs space to move around in and strengthen his muscles. I'm sure you have so many projects that would be much easier to finish quicker if you had that for him :) Why have all that space if Max is stuck in a tiny home or being carried all the time? Seems like such a waste. I'm sure you two will figure it out :) I'm also confused about why you're cold. I thouht you had heat in there?

    Have you thought about an activity chair for Max? It’d free you up and encourage his being not attached to literally your hip. My niece is only 5 months old and loves the center I bought her. And he can scoot around your kitchen or deck while your busy.
