I use the Bose QC35 II on bluetooth for gaming all the time and I have not noticed any delays, even when playing games where hearing footsteps of opposing players can be key to winning. Unless you are an esports player and demand perfection, I don't think this latency is much to worry about.
I haven't tried it in the gym, but it stayed securely on me when I was on the move. Keep in mind there's no ingress protection, and it's not sweat resistant
