[Wife's Cuisine] Japchae

    From old times, Japchae has been treated as luxurious party food.
    With sweet sauce, you can easily finish a bowl of it because it's so good. The recipe is also easy!
    -
    [INGREDIENTS] - 4 servings -
    Basic: 200g Dangmyeon(sweet potato starch noodles), 100g Beef, 3 Shiitake mushrooms, 2 handful Spinach, 1/2 Carrot, 1 Onion, 8 Wood ear, 2 Eggs, Sesame
    Beef sauce mixture: 1tbsp Soy sauce, 1tbsp Sesame oil, 1tsp Sugar, 1tsp Minced garlic, Pepper
    Noodle sauce mixture: 3+1/2tbsp Soy sauce, 1+1/2tbsp Sugar, 1tsp Minced garlic, 3tbsp Sesame oil, Pepper

    1. Put dried Dangmyeon in cold water and leave it for 30 mins. Chop carrots, shiitake mushroom and onion. Cut soaked tree ear mushroom into 4 pieces. Mix beef with soy sauce and leave it for 10 mins.
    2. After cutting the roots of spinach and washing it, put a pinch of salt in boiling water and spinach. Blanch it little bit and remove water. Put a pinch of salt and sesame oil to spinach and mix them.
    3. Separate egg yolk and white and put a pinch of salt into it and mix. Make egg garnish and chop it.
    4. Stir-fry onion, carrots, and tree ear mushroom in order and lastly put beef and shiitake mushroom together and stir-fry with others.
    5. Put Dangmyeon into boiling water and boil it for 3 mins. Blanch it with water and remove moisture. Put sauce and boiled Dangmyeon into a pan and stir-fry them for 2 mins in mid-heat. Cut them in pieces.
    6. Put Dangmyeon, fried veggie and sesame oil and mix them. Lastly put egg garnish and mix it with other stuffs. (You can add more sauce in it if you want)
    7. Put them on a plate and sprinkle sesame seeds.

    This is a very good dish to have leftovers, just microwaved tastes great and mixing this with rice and gochujang as bibimbop is fantastic.

      I have cooked this many times and I never used plastic gloves.
      Stop using plastic.. How many did you use? 3 😢
      For the meat ...really??!!! Use a fork.
      For the spinach??!!! Use the colander and strainer to remove water. No need to squeeze water out using gloves.
      Mixing all ingredients??!!!
      3 plastic gloves!! Omg 😮
      I'm surprised you didn't cut egg pancake with gloves.
      Use a fork , chopsticks or serving fork and spoon to mix.

    잡채가 정말 맛있게보여요
    시댁에서할때는 안불리고 바로 끓는물에 넣고 빼서 식힌후 따로 양념해서 무치던데 맛은 걍 평범하고 더먹고싶지않은데 이건 면도 쫄깃탱탱해보이고 색감도 진짜 맛있어보여요
    함 도전해봐야겠어요

    시간이 없으신 경우에 당면 불리지 않고 끓는 물에 7분 30초에서 8분 정도 삶으면 더 빨리 할수 있어요. 당면 불리려면 요리 시간도 길어지고.. 사실 굳이 불려야할 이유도 없구요 :)
    Actually the dangmyeon doesn’t need to be soaked in the water. Otherwise it takes more than half an hour for soaking. Cook it in the boiling water for 7 minutes 30 secs or 8 minutes without soaking. And then remove the water from the dangmyeon... This way is easier and faster to cook the Japchae. :)

      맞아요^^ 미리 불린 당면을 삶지 않고 바로 프라이팬에서 볶아도 꽤 괜찮아요. 댕면이 탱글 탱글해져서 아주 맛나게 되요.
      You're right. The other way to make Japche is that it does not need to boiled just using enough soaked glass noodle and stir fried it. This Japche is very elastic and chewy.

    아 진짜 맛있겠다..저 잡채 진짜 좋아하거든요ㅠㅠ이번에 설때 가족끼리 만들어 먹을거에요~!저희는 가족끼리만 보내거든요 계란 지단을 마지막에 넣으니 이쁘네요 매번 같이 넣어서 섞으니까 지저분했는데ㅠㅠ표고버섯도 넣으니 진짜 맛있겟어요ㅠㅜ매번 느타리만 넣었는데ㅠㅠ

    Literally had japchae at his resturant called korean house. it was good but it was so much food. i couldn’t finish it in general even with only one bowl of rice.

    I understand that japchae is made from leftover dishes (correct me if im wrong), but if we were making it fresh, wouldnt it be easier to stirfry every veg at once instead of separately? I always wondered this. No disrespect.

      Japchae is not made from leftover, fresh vegs are needed.
      &when very busy u can stirfry every vegs at once, but result ~>not as beautiful, tasty as above dish

      Yes, you're right! Although she's made a beautiful home cooked edition, this is more often served like a potluck food item in Korea. I've eaten it many times at weddings and other big events, and it is a bit like the Western equivalent of serving potato salad. Not that this IS potato salad, but that you don't eat potato salad warm.
      The only difference is you shouldn't put japchae into the fridge or the noodles will harden and taste weird afterwards! The noodles are soft and bouncy with a bit of a jelly texture (from the sweet potato starch) and they absorb the sauce but stay perfect without over absorbing like an italian pasta would. I hope you get to try it one day!
