Ingredients
- 85g (3 oz) unsalted butter
- 2 x 280g (2 x 10 oz) packets of marshmallows
- 150g (5.3 oz) Rice Bubbles (or Rice Krispies)
Method
1. Combine the butter and marshmallows in a pot. Melt them together over a medium-low heat, ensuring they melt smoothly without bubbling up. The goal is to avoid caramelising the marshmallows.
2. Once melted, turn off the heat. Add the Rice Bubbles to the pot, stirring thoroughly to evenly coat them in the sticky marshmallow and butter mixture.
3. Prepare an oven tray by lining it with greaseproof paper. Carefully transfer the Rice Bubble mixture to the tray. Firmly press the mixture into all corners of the tray. Then, cover the top with another sheet of greaseproof paper. Place a second baking tray on top and weigh it down with some kitchen weights, such as canned food or a bottle of water.
4. Allow the crispy treats to set for two hours. After setting, cut them into squares. For an extra bit of fun, you might try constructing an igloo out of the squares, just as suggested. Enjoy your creation!

I remember for school fete's etc my mum would always make toffee's in little paddy cake holders. I never understood the fascination in eating them but everyone loved them.

My childhood right there. I grew up in the early 90’s allergic to wheat, eggs, and peanuts. My mom would make these for me on my birthday in place of cake and sometimes surprise me with them when I came home from school 😊

My wife makes brown butter rice crispy treats with a touch of salt!!! Ooooooooweeeee!!! We call them adult rice crispy treats.
Where I’m from “adult rice crispy treats” means they’re made with fruity pebbles and w33d butter 😄

Grew up eating and later making these for my family. The original recipe calls for a splash of vanilla flavoring...makes all the difference in taste. Yum.
I use other candy flavoring sometimes too. Those lorann candy flavors are fun. My favorite is still that bright yellow fake banana lol.
I'm tickled that occasionally stores near me carry little banana flavored marshmallows that are dipped in sugar like peeps. The peach ones are good too. The ice cream ones pfft.. just buy regular marshmallows and dip in sugar. Same flavor 😅

I recommend making them a day ahead because I think the flavor improves with a little age. I have also experimented with browning the butter just a bit to give a different flavor. I think adding a pinch of salt helps and if you want to add shredded chocolate you get a whole other kind of treat.

There's a version of this snack in Indonesia. Made from popped rice or corn. Instead of marshmallow, we used caramel to bind the rice or corn.

Special tip: add pure vanilla extract after melting the marshmallows and butter, and after you remove it from the heat. It makes AMAZING rice crispy treats!

My aunt used to make these when l was a child. I absolutely loved them. When l came back from Europe in my 30s she brought me a batch. I was so touched that she'd remembered. No cheating marshmallows in hers though. She made proper ones with caramel made from honey. 😁

I make them every once in a while, and also sometimes use other cereals. The winner thus far has been the Smorz cereal, because with real marshmallow, it actually tastes VERY smore-y.

Ooh my family loves making hommade rice krispy treats, though we really like to put peanut butter in them and it’s soo good. Also once we did it with popcorn instead of the cereal with some M&M’s, that was pretty good too

Love the fun edits. Although, for a fun twist on the recipe, try browning the butter, then adding a shot of bourbon before putting in the marshmellows - also putting flaky salt on top after pressing it into the dish, but before it sets.
