Should I been include paper goods in COGS?
Depends on how they are used.
question... so I add the gm's salary or my salary in labor cost or in the PnL as a business cost? also I would like your 90 day plannwe.

The GM salary is almost definitely part of your labor cost, an owners salary might not be.
