Hi ! If you install Windows in the settings that you have indicated (legacy) and then reset to UEFI, will it boot up the windos?

No, simply because MBR booting works only on MBR partioned disk & GPT works only on UEFI Secure Boot. Both don't work vice versa! If you do as you wrote, your system will be unbootable!
