    As a Volt owner I get exasperated by the fact that "recipes" do not have Volt specific instructions. There is nothing here about timings, temperatures or Top/Bottom adjustments. e.g. The link to the "recipe" takes me to an instructions page for an "Overloaded Pepperoni Detroit" (not the video here) baked in a gas oven with NO mention of par baking or the things the Volt instructions say in the video above. (It also says bake at 400C while the Ooni pan instructions say max is 370C! so you may want to change that.) If you go hunting for the basic Detroit pizza in the recipes, the one you get has, again, no mention of par bakes, etc, but what it does say is "...turn the flame down to its lowest setting"!!! What does that mean for a Volt? The Volt is the most expensive oven you sell - I think it should offer better support for owners.

      100% agree. The Ooni recipes for the Detroit Style Pizza are not well written, especially so with regards to the Volt. Frankly most of the Ooni recipes for other pizza types are not that great either.

    I can't believe your company saw the result of that video, edited it, and said "let's publish it." If an Ooni is your only oven, top the dough with everything right away and cover it with foil at a low heat (after letting the stone heat up). The toppings will hold down the dough, then the final bake after removing the foil will crisp the cheese and pepperoni. Did this guy even test this out before filming? Every pepperoni sunk to the middle and he's just going with it "this looks great."
    If this helps anyone, make an 80% hydration dough (focaccia) and, if you must cook in an Ooni, heat the stone, then top the dough (cheese, then sauce and pep) and cover with foil and check after a few minutes. When the dough has risen and the cheese is melted, pull off the foil and let those flames curl the pep and brown the cheese, turning as needed.

      Thanks for your feedback! There are multiple methods for making the different styles of pizza. This is one way that we enjoy and definitely recommend if you're looking for a fluffy DSP! If you prefer another method, that's ok too! 💛🍕

      I make Detroit style in my Koda 16 all the time, just get a Loyd’s pan and watch the temp. Lower it and keep turning, roughly 15 minutes to cook it

    As a michigander, there are very few resturants that actually put the sauce on top anymore, usually dough, toppings, sauce, then cheese. Still a few that do it the "original" way. Personally i like the cheese on top.

      I much prefer sauce on top. Cheese on the bottom keeps the crust from getting soggy

      That looks like a restaurant type ladle that you would have to go to a restaurant warehouse/store for, like Restaurant Depot. There are online retailers too.

      @@mikes360 we used the larger of the two Detroit pizza pans this evening and fed 4 adults and two kids with no problem, if your hungry, the large would feed 4 adults though 😜
