Nate actually made cooking really accessible for me and by that I mean he made it simple and who cares if you get things a bit wrong. Nothing needs to be exact. That was a game changer.
As an Australian I don't even notice the swearing. Nats what I reckon is a good cook though, he often shows how easy it is to make things at home fresh and better then store bought things.

Chinese Aussie here - this is my version! Finely chopped carrot, onion, shiitake mushrooms, peas - sauté Day old rice, vegetable oil, cook/toss eggs in next (lightly scramble on the side of wok with rice still in wok then mix in. Add oyster sauce and toss. Add veggies back in and toss. That’s it. And yes, Aussies swear a lot 🤣
There's nothing that really puts things into perspective as an Australian, than talking to American mates. They make me realise how much I do actually swear 😅
Nat is a legend. He has some very good recipes, and he knows his way around a kitchen. He didn't swear much in this video, compared with his other videos. I finally bought a rice cooker, because it was 50% off.😂

As Asian (Indonesian), I recommend you guys buy rice cooker. It multipurpose. You can cook instant noodles, soup, pasta, some dessert even spaghetti using rice cooker and it still taste good. If you don't believe me, watch Uncle Roger review on chef using rice cooker to cook other stuff 😂

Nat’s carbonara video is worth a watch, although he does use bacon. his target audience is people who would otherwise not cook, so he makes the recipes very simple, but they are all solid.
So it took Nigel quite a long time to notice Nat. BTW Nat is a mental health advocate (and comedian and musiscian and social communicator). He makes great cooking videos. He's not the best chef, but he knows what he's doing.
I reckon Nate is great entertainment, good cook and makes cooking cool, simple, healthy and easy to follow for any-one starting out (without a huge ego to!!)

I built a huge kitchen island, and my stove is in it. It's absolutely covered, chef mike, air fryer, spice rack, knife block full of knives I don't like but they were a gift, blender, crockpot, sometimes a waffle iron and an ice cream maker, often tomato starters or herb plants, the scoops to feed the chickens, along with everything random they decide to put on a flat surface. I don't like clutter, but I'm not great at managing it, either. If it were just me, I could figure it out now and then, but with all of the variables, it's too much. Another counter is about 16 ft. Giant flour jars, baking books, a popcorn maker, cereal boxes, bulk bags of PG Tips, food processor, more tins of tea.... then another with a toaster oven, giant jars of sugar. a spice cabinet. Then a separate counter for the kettle, a pot to hold the tea hot, a coffee maker, more tea, a jewelry box I made is there for some reason, bags of coffee, but the grinder is on the counter beside the flour way over there....Chaos, and it's all opposite side of the house for all my BBQ stuff. So I do get my steps in to make up for brisket and pulled pork. 2 more counters with sinks with clean dishes piled on both sides of them, and a zip lock bag hanger/dryer thing. I'm making this post for therapy

That is literally exactly how all of us Aussies talk. Swearing is part of our everyday, every sentence vocabulary. I don't swear like that in front of my kids, but at work or with my mates or siblings. You don't even notice it.
Having Aussie friends, Nat didn’t use nearly the amount of f-bombs he’s capable of. However, I would actually sit down and eat his fried rice. Nigella and Jamie seem to have little to no idea what Asian cuisine is supposed to taste, smell, include and look like. From the ‘husky hit of miso’ to the ‘chili jam’, it appears neither of these British chefs have a clue what they’re doing.

9:13 he says that he's lived in the new place for almost 3 months. You can also tell from the position of the camera that his sink is now on an island and not the same as the old moldy one.
I wanna jump in on rice cooker debate here. Finally bought 1 last month because of Uncle Roger. And It is hands down my favorite thing I have in the kitchen. Rice is so damn finicky and it can screw up a hectic home cooking meal real fast. Nothing worse than everything coming out great and you screwed up Rice
Yeah...but not only can you make nothing but rice in it, you can make nothing but one specific kind of rice. No pilaf, no risotto, just...plain cooked rice. Which I pretty much never eat. Unless you need leftover cooked white rice for something like rice pudding or egg fried rice (so like 3 or 4 times a year for me), it's taking up space in my kitchen I'm not willing to spare. I'd be dusting a rice cooker more often than I'd be using it, lol.
I bought a microwave rice cooker. 1 part rice to 1.5 parts water for 11 minutes, and perfect rice everytime. Oh, Nat doesn't like microwave ovens. We call food 'tucker' in Australia, Nat calls the microwave the Tucker F&cker....lol
I’m shocked because I’m Korean and my 74-y.o. mom has always made fried rice in a saucepan with sesame oil. (I don’t think most people in Korea know about woks, and we don’t have peanut oil?) maybe we do Asian wrong 😂 but kimchi fried rice tastes great with sesame oil and butter (that’s all umami, without msg 😅)

This is also aimed at Australian plebs that rarely cook. We don't have quality wok burners on a stove, and we don't generally own a wok. I get migraines and asthma from MSG. I have an allergic reaction to most "sodium" elements. Red wine is a major trigger. That's why I drink Tooheys beer.

Although Nat's had his channel since 2006 he only started the cooking videos when his 2020 comedy tour was cancelled due to covid. While shopping he noticed that although the supermarkets had lots of fresh produce in stock, they were all low on packet mixes and jar sauces so he decided to make his cooking episodes about cooking from fresh, hence the destroying of the packet of stir-fried rice at the beginning which is a running theme.
I just wanted to add that there is a lot of regional differences within the same country too with what folks will use. In the US if you go into the interior like WY they use way more peanut oil in things I hadn't seen on the West Coast. Most Mexican food is ok but depending on where they are from the fresh salsa and enchilada sauce may have peanuts. Mole sauce should be avoided always because even if it usually doesn't have peanuts people will reconstitute mole concentrate with peanut butter. Your local friends may not know or think to mention it. Always ask the server to make sure. Don't take a risk in a new area without any meds on hand. Got told a cookie was something else then realized it was peanut in MO. The person felt bad because they thought a different cookie had been set out. I caught it quickly and spat it out but still reacted to it. Then I had to get benadryl as they had none. Always have your meds and epipen.
If you're sick of single purpose toaster just like Uncle Roger, then i welcome you with the greatest Turkish invention. The word of toast, we use it for grilled cheese or almost any kind of pressed/grilled sandwich. So we have a thing called "toast machine" which is an electric grill or press basically. If you have two slices of bread and preferably some cheese then you'll have a "toast" as we say or grilled cheese for breakfast, lunch, dinner, or at any time. This is the greatest multi-purpose tool ever :)
Your thing makes me think of a panini press when we got ours we used it for like fifty percent of our meals. We still love it but we air fry a lot now.
@@Short-mistress Oh yeah, thank you! I completely forgot about the panini press machines. It is basically the same thing and works with electric only. There are such models with different pre heated programs for different things to cook on our toasters too. But mostly we use it for making "toast" as i described and sometimes for reheating stuff with baking paper. Well it is basically a grill so i guess you could make almost everything with it if you're willing to clean it afterwards :)

Japanese culture around tattoos is certainly complicated, but generally I think it is looked down upon most because if people see you have tattoos they assume you are yakuza. (Or comparable member of an organized crime group, if you are a foreigner)

Nat's videos on cooking are awesome. Probably not as authentic recipe wise, but he's no professional chef either. He just puts it together into a funny video, the way he has waged an all out war on packet food and jar sauce is just hilarious.
Nat is a legend, swears a bit though. His end of days bolognese at the start of the pandemic was the video that really took him to prominence. I enjoy his humour and message that anyone can cook and not rely on processed food hence his motto "#$%^ jar sauce"
In India we cook rice in a pressure cooker. We also have a rice cooker, and my mother used to use it for several years. But I just use the pressure cooker. When I was in the US, I just used a plain open pot.
The packet rice Nat destroyed at the start is Continental brand "Oriental Fried Rice," cooks in 10 minutes with water and butter added. It has freeze dried vegetables in it, and tastes very weird.
Yeah, swearing is pretty much par for the course here in Australia. You either accept it or you get inured to it. Nat isn't even that bad. I live in a country town and some of the swearing I hear on a regular basis would make a sailor blush. I would definitely eat Nat's fried rice over Jamie's.
That does sound rather delicious but beans are my happy place - hot, cold, straight out of the can, with an egg, or with cheese, or with anything you can imagine ... beans are the ultimate go to!! ❤️
I don't understand why still so many people don't understand the difference between "Egg fried rice" and "Fried rice". Egg fried rice is a specific dish. Fried rice is whatever you want it to be.
Exactly. And the most amazing part in fact is even that they are constantly about that the rice needs to be a day old (it doesn't - it just needs to be complete cooled down and preferably refrigerated for at least an hour) and then everything else is apparently supposed to be fresh. Myself I'll add practically any leftover that I stored in the fridge to my nasi goreng and for fresh ingredients I use whatever is in season. Admittedly this has not always turned into a success, strong flavoured veggies such as fennel and (root) celery make it somewhat weird and purple carrot gives it a kind of Halloween appearance.

On sesame oil, I heard that there are actually different sesame oils for frying and for finishing. The finishing oil is more aromatic and flavorful, while the cooking sesame oil is lighter, and more neutral
Virgin sesame oil is the lighter one used for frying. It's much more subtle but has a delicate sesame flavour. It's made by pressing the oil out of raw sesame seeds. The finishing one is made by pressing the oil out of roasted seeds - this concentrates the flavour. The virgin sesame oil is used a lot in Middle Eastern and Indian (west Asian) cooking, but very rare in east Asian cooking.
In India we use both sesame oil and peanut oil to cook. Also, Nigel (Uncle Roger) is a comedian. I think his exaggerated love of MSG is just part of the comedic act (especially since it gets villanised so much but is such a common ingredient in Southeast Asian cooking).
Yeah in Japan, tattoos are usually associated with the Yakuza, and so many businesses will not let people with tattoos that they can see into their business, especially bath houses and things like that. The last six or seven years they really cracked down on the Yakuza though. It's interesting, the whole history with how samurai became Yakuza and the relationship that they have had with the military and the police, especially after world War II. Is very little to do with anything in the video but it's still interesting.
As an Asian, Brunch (breakfast+lunch) : nasi lemak. Malaysian’s national dish which is coconut milk rice with chicken, egg, cucumber and sambal Dinner: rice Rice is like an essential staple. Carbs are essential in Asia while toast is something we put out on a weekend for breakfast. For my country (Singapore) we eat kaya butter toast for breakfast a lot though, and rice cookers are everywhere

I own a rice cooker, and yet still find myself cooking rice most often in a small Staub dutch oven. Especially when cooking rice in styles where you need to toast the rice first it is simpler. The heavy cast iron dutch oven does a fantastic job of cooking the rice. Add rice and liquid, get to boil, put lid on the dutch oven, reduce the heat to super low, 25 minutes, turn off the heat and let it finish with about 10 minutes of steaming in the residual heat before lifting the lid. Thats more or less how I was taught by a Chinese woman who was trained as a chef in Japan and later moved to the US, where I met her.

8:08 - did the same, cut the tip of my thumb off when halving an onion and (yes, obviously the knife should have been sharper) and the onion slipped as I started to cut into it. Wow that was a lot of blood for a superficial injury.
Rice cooker is basically just a programmable , smaller version (or not, depends on the volume) of stock pot, I cooked noodles ,pastas, soups, borsch, once I even baked a Black forest cake and a cheese cake with it. If you need to cook with the lid open, also fine. I can't think of anything a pot can do while rice cooker can't. oh, and most modules also came with an attachment for steaming food( I'm not sure what the layer in steamer,with holes in it is called ,wish someone could tell me ). But James has a good point too, sometimes you just need to have a feel of what you are cooking.
Wash two to three times and then soak the rice. After soaking, leave it for 5 min. Then drain and add the rice in rice cooker. Precise ratio of rice to water is 1:2 with the same cup or any measuring cup you use. Thats all. Leave the cooker to boil for 3 whistles and then take out and let it cool. Open the lid after the safety valve opens up.
I never tried beans on toast, but it makes about as much sense to me as spaghetti with garlic bread... but then potatoes with rice are not bad, so maybe I should try it.
It's a nice bit of comfort food. Just make sure your toast is fresh from the toaster, little scrape of butter, top with the beans and eat immediately. Probably most of the UK student population lives on this as it's cheap, quick and satisfying and you can't really mess it up Xd
8:18 In Japan this is pretty accurate that we need to respect kitchen appliance and always keep it in maintain at all cost. Cause there's a believe that god is also exist in every kitchen at homes. That is how we know rather the food is good or not is based on how you treat the kitchen itself.
Got to say having a rice cooker is the way to go if you're not very good in the kitchen. I can make some decent rice in one but have trouble making good scrambled eggs.
Hm. Just a quick one for stovetop rice cooking - rice to water ratio may vary depending on the type of rice, but scaling the recipe up with that 1.5 cups of water per 1 cup of rice may be too soggy and may reach porridge territory if it was 3 cups or more (highly likely - have effed up a large batch of rice for lunch rush that way when I was starting in our family restaurant). For the longest time, we use the finger knuckle technique to measure the amount of water needed to cook rice and it always turned out great, except for the times when we went for a different type of rice or changed pots (e.g. larger or smaller) when we have to trial and error the right "knuckle" level for water. Turns out it will almost always take the same amount of water for evaporation no matter how much rice you cook, assuming you use the same pot and said pot is a uniform cylinder shape, which makes the knuckle method kinda working like an oil/dipstick to allow enough water for evaporation without sogging up the rice. And since the pot is cylindrical, the knuckle water level will almost always the same volume when measured. Seen this being tested on Still works to this day, and even at the restaurant when we use the big arse rice cooker (which isn't fuzzy logic or the smart Zojirushi), we still use the same technique, albeit with a wooden spoon nicked with a knife at the right water level. XD
I have a one quart sauce pan/pot. I put one cup of water in, I eyeball a scoop of Jasmine rice, when the water boils, toss it in, and set a timer for 8 min. At 8 min, take the small bowl off that I use for a lid, give it a stir with a fork and put the bowl back, turn off the burner. Then I cook whatever else I am having. Perfect portion of rice every single time. I have lots of "single use" appliances. Grinder, slicer, dehydrator, toaster, etc. But I'll be damned if I lose my knack for cooking rice by buying a damn rice cooker. Up Yours Uncle! Ok, a dash of MSG isn't so bad. P.S. I think the fetching wife left the day he came home with that hideous polo shirt. LOL

So I do get my steps in to make up for brisket and pulled pork. 2 more counters with sinks with clean dishes piled on both sides of them, and a zip lock bag hanger/dryer thing. That is literally exactly how all of us Aussies talk. Swearing is part of our everyday, every sentence vocabulary. I don't swear like that in front of my kids, but at work or with my mates or siblings. You don't even notice it.

Having Aussie friends, Nat didn’t use nearly the amount of f-bombs he’s capable of. However, I would actually sit down and eat his fried rice. Nigella and Jamie seem to have little to no idea what Asian cuisine is supposed to taste, smell, include and look like. From the ‘husky hit of miso’ to the ‘chili jam’, it appears neither of these British chefs have a clue what they’re doing.
As far as Western sensibilities go, we should just be glad he wasn't throwing around c-bombs like Jim Jefferies.

I wanna jump in on rice cooker debate here. Finally bought 1 last month because of Uncle Roger. And It is hands down my favorite thing I have in the kitchen. Rice is so damn finicky and it can screw up a hectic home cooking meal real fast. Nothing worse than everything coming out great and you screwed up Rice

Yeah...but not only can you make nothing but rice in it, you can make nothing but one specific kind of rice. No pilaf, no risotto, just...plain cooked rice. Which I pretty much never eat. Unless you need leftover cooked white rice for something like rice pudding or egg fried rice (so like 3 or 4 times a year for me), it's taking up space in my kitchen I'm not willing to spare. I'd be dusting a rice cooker more often than I'd be using it, lol.

This is also aimed at Australian plebs that rarely cook. We don't have quality wok burners on a stove, and we don't generally own a wok. I get migraines and asthma from MSG. I have an allergic reaction to most "sodium" elements. Red wine is a major trigger. That's why I drink Tooheys beer.
The rice cooker isn't a single use appliance, the one we have at home we use for making curries sometimes, and even for steaming stuff!
The F bombs are integral part of the Ozzy egg scent.

Although Nat's had his channel since 2006 he only started the cooking videos when his 2020 comedy tour was cancelled due to covid. While shopping he noticed that although the supermarkets had lots of fresh produce in stock, they were all low on packet mixes and jar sauces so he decided to make his cooking episodes about cooking from fresh, hence the destroying of the packet of stir-fried rice at the beginning which is a running theme.
I also cut the tip of my finger off while cutting potatoes and to this day when ever something touches directly to the wound it stings bad
I just wanted to add that there is a lot of regional differences within the same country too with what folks will use. In the US if you go into the interior like WY they use way more peanut oil in things I hadn't seen on the West Coast. Most Mexican food is ok but depending on where they are from the fresh salsa and enchilada sauce may have peanuts. Mole sauce should be avoided always because even if it usually doesn't have peanuts people will reconstitute mole concentrate with peanut butter. Your local friends may not know or think to mention it. Always ask the server to make sure. Don't take a risk in a new area without any meds on hand. Got told a cookie was something else then realized it was peanut in MO. The person felt bad because they thought a different cookie had been set out. I caught it quickly and spat it out but still reacted to it. Then I had to get benadryl as they had none. Always have your meds and epipen.

If you're sick of single purpose toaster just like Uncle Roger, then i welcome you with the greatest Turkish invention. The word of toast, we use it for grilled cheese or almost any kind of pressed/grilled sandwich. So we have a thing called "toast machine" which is an electric grill or press basically. If you have two slices of bread and preferably some cheese then you'll have a "toast" as we say or grilled cheese for breakfast, lunch, dinner, or at any time. This is the greatest multi-purpose tool ever :)
Your thing makes me think of a panini press when we got ours we used it for like fifty percent of our meals. We still love it but we air fry a lot now.
@@Short-mistress Oh yeah, thank you! I completely forgot about the panini press machines. It is basically the same thing and works with electric only. There are such models with different pre heated programs for different things to cook on our toasters too. But mostly we use it for making "toast" as i described and sometimes for reheating stuff with baking paper. Well it is basically a grill so i guess you could make almost everything with it if you're willing to clean it afterwards :)

Nat is a legend, swears a bit though. His end of days bolognese at the start of the pandemic was the video that really took him to prominence. I enjoy his humour and message that anyone can cook and not rely on processed food hence his motto "#$%^ jar sauce"
In India we cook rice in a pressure cooker. We also have a rice cooker, and my mother used to use it for several years. But I just use the pressure cooker. When I was in the US, I just used a plain open pot.
The reason why food is better in Australia then most places is their ingredients, their proteins like beef and fish for example.
The packet rice Nat destroyed at the start is Continental brand "Oriental Fried Rice," cooks in 10 minutes with water and butter added. It has freeze dried vegetables in it, and tastes very weird.

I don't understand why still so many people don't understand the difference between "Egg fried rice" and "Fried rice". Egg fried rice is a specific dish. Fried rice is whatever you want it to be.
Exactly. And the most amazing part in fact is even that they are constantly about that the rice needs to be a day old (it doesn't - it just needs to be complete cooled down and preferably refrigerated for at least an hour) and then everything else is apparently supposed to be fresh. Myself I'll add practically any leftover that I stored in the fridge to my nasi goreng and for fresh ingredients I use whatever is in season. Admittedly this has not always turned into a success, strong flavoured veggies such as fennel and (root) celery make it somewhat weird and purple carrot gives it a kind of Halloween appearance.
The idea of day old rice is, by storing it in the fridge, you remove all the moisture out of it and stops it from going "gluggy".

On sesame oil, I heard that there are actually different sesame oils for frying and for finishing. The finishing oil is more aromatic and flavorful, while the cooking sesame oil is lighter, and more neutral
Virgin sesame oil is the lighter one used for frying. It's much more subtle but has a delicate sesame flavour. It's made by pressing the oil out of raw sesame seeds. The finishing one is made by pressing the oil out of roasted seeds - this concentrates the flavour. The virgin sesame oil is used a lot in Middle Eastern and Indian (west Asian) cooking, but very rare in east Asian cooking.
In India we use both sesame oil and peanut oil to cook.
Also, Nigel (Uncle Roger) is a comedian. I think his exaggerated love of MSG is just part of the comedic act (especially since it gets villanised so much but is such a common ingredient in Southeast Asian cooking).
Yeah in Japan, tattoos are usually associated with the Yakuza, and so many businesses will not let people with tattoos that they can see into their business, especially bath houses and things like that. The last six or seven years they really cracked down on the Yakuza though.
It's interesting, the whole history with how samurai became Yakuza and the relationship that they have had with the military and the police, especially after world War II.

Rice is like an essential staple. Carbs are essential in Asia while toast is something we put out on a weekend for breakfast. For my country (Singapore) we eat kaya butter toast for breakfast a lot though, and rice cookers are everywhere

I own a rice cooker, and yet still find myself cooking rice most often in a small Staub dutch oven. Especially when cooking rice in styles where you need to toast the rice first it is simpler. The heavy cast iron dutch oven does a fantastic job of cooking the rice. Add rice and liquid, get to boil, put lid on the dutch oven, reduce the heat to super low, 25 minutes, turn off the heat and let it finish with about 10 minutes of steaming in the residual heat before lifting the lid. Thats more or less how I was taught by a Chinese woman who was trained as a chef in Japan and later moved to the US, where I met her.

Rice cooker is basically just a programmable , smaller version (or not, depends on the volume) of stock pot, I cooked noodles ,pastas, soups, borsch, once I even baked a Black forest cake and a cheese cake with it. If you need to cook with the lid open, also fine. I can't think of anything a pot can do while rice cooker can't. oh, and most modules also came with an attachment for steaming food( I'm not sure what the layer in steamer,with holes in it is called ,wish someone could tell me ).
But James has a good point too, sometimes you just need to have a feel of what you are cooking.

Wash two to three times and then soak the rice. After soaking, leave it for 5 min. Then drain and add the rice in rice cooker. Precise ratio of rice to water is 1:2 with the same cup or any measuring cup you use. Thats all.
Leave the cooker to boil for 3 whistles and then take out and let it cool. Open the lid after the safety valve opens up.
I never tried beans on toast, but it makes about as much sense to me as spaghetti with garlic bread... but then potatoes with rice are not bad, so maybe I should try it.
It's a nice bit of comfort food. Just make sure your toast is fresh from the toaster, little scrape of butter, top with the beans and eat immediately.
Probably most of the UK student population lives on this as it's cheap, quick and satisfying and you can't really mess it up Xd

Got to say having a rice cooker is the way to go if you're not very good in the kitchen. I can make some decent rice in one but have trouble making good scrambled eggs.

Hm. Just a quick one for stovetop rice cooking - rice to water ratio may vary depending on the type of rice, but scaling the recipe up with that 1.5 cups of water per 1 cup of rice may be too soggy and may reach porridge territory if it was 3 cups or more (highly likely - have effed up a large batch of rice for lunch rush that way when I was starting in our family restaurant).
For the longest time, we use the finger knuckle technique to measure the amount of water needed to cook rice and it always turned out great, except for the times when we went for a different type of rice or changed pots (e.g. larger or smaller) when we have to trial and error the right "knuckle" level for water.
Turns out it will almost always take the same amount of water for evaporation no matter how much rice you cook, assuming you use the same pot and said pot is a uniform cylinder shape, which makes the knuckle method kinda working like an oil/dipstick to allow enough water for evaporation without sogging up the rice. And since the pot is cylindrical, the knuckle water level will almost always the same volume when measured. Seen this being tested on
Still works to this day, and even at the restaurant when we use the big arse rice cooker (which isn't fuzzy logic or the smart Zojirushi), we still use the same technique, albeit with a wooden spoon nicked with a knife at the right water level. XD

I have a one quart sauce pan/pot. I put one cup of water in, I eyeball a scoop of Jasmine rice, when the water boils, toss it in, and set a timer for 8 min. At 8 min, take the small bowl off that I use for a lid, give it a stir with a fork and put the bowl back, turn off the burner. Then I cook whatever else I am having. Perfect portion of rice every single time. I have lots of "single use" appliances. Grinder, slicer, dehydrator, toaster, etc. But I'll be damned if I lose my knack for cooking rice by buying a damn rice cooker. Up Yours Uncle! Ok, a dash of MSG isn't so bad. P.S. I think the fetching wife left the day he came home with that hideous polo shirt. LOL
