Pad Thai in the south tastes different from Bangkok. The main ingredients are curry paste, coconut milk, stir-fried with vermicelli noodles and sea prawns. Southern Pad Thai are juicier than Bangkok style because it is an old-fashioned stir-fried noodles.
I love the food challenges mate, really interesting to show anyone hoping to head across to the region for the first time - or some ideas if they are already here. Spicy challenge is my favourite 🔥 🔥 Thanks for the vids!

Sorry your plan A went awry, but your plan B is awesomely delicious!😋. Nothing better than grilled catfish with Nam Jim Jaaw and sticky rice, but your version with Pad Thai is ok, too, Joe. 😋
There is always a plan B or plan C Panna and it is about keeping the positive attitude to find the next experience if that is the case. I learned doing ago on these trips to travel without expectations since things rarely go as they should. Catfish was amazing!
I googled "horseshoe crab + poisonous" and there were just way too many articles popping up for comfort. I think I'll give those ugly-looking things a miss the next time I'm in Siam.
Slight faux pas. Don't put the used lime skin or your half eaten onion back on the platter. What isn't touched or used is usually reused for the next customer. But I'm glad you are a pad Thai convert (ish). Greatest easy dish ever.
see I am thinking I am being polite by not throwing it out or on the side. Most of the time I use all the lime given to me anyway, so it makes no difference. I do like it sour.

Pad Thai if you don't like sweet I recommend squeezing a lemon. With a little chili seasoning, it's very delicious.😊😊
good idea, I squeeze as much as I can haha. needs a lot of chilli seasoning though, I like it spicy.
