  • Cream puffs 3 ways with a simple pate a choux recipe. The filling possibilities are endless. Add craquelin on top to bring it to the next level or make it savory by adding cheese!
    RECIPES:
    Pate a choux:
    1/2 cup (120 ml) whole milk
    1/2 cup (120 ml) water
    1/2 cup (115 g/1 stick) unsalted butter
    1/2 tsp salt
    1 cup (120 g) all purpose flour
    1 tsp (4 g) sugar
    4 eggs
    Extra cheesy gougères:
    1 cup gruyere or parmesan
    1/2 tsp ground nutmeg
    black pepper
    small cube of cheese for filling (mozzarella, cheddar, gruyere,
    fontina, provolone, gouda, etc) - optional
    Choux au craquelin:
    1/2 cup (115 g/1 stick)
    softened unsalted butter
    1/2 cup (100 g)
    light brown sugar
    1 cup (120 g) flour
    1/4 tsp salt
    Pastry cream:
    2 cups (455 g) whole milk
    1 scraped vanilla bean + pod or 2 tsp vanilla extract (1 1/2 Tbsp ground coffee/instant coffee for coffee pastry cream)
    1/2 cup (100 g) sugar
    1/4 cup (30 g) cornstarch
    1/4 tsp salt
    4 large egg yolks
    3 Tbsp (45 g) unsalted butter
    Optional chocolate glaze:
    4 ounces chocolate
    1/2 cup (120ml) heavy cream
    Optional whipped cream topping:
    1 cup (240 ml) heavy cream
    1 tsp vanilla extract
    1-2 Tbsp sugar
