I had some leftover kimchi that sat at the back of my fridge for awhile. It's too sour to eat as a side dish, but it made the most tasty kimchi stew I've ever cooked (even for a first attempt). I didn't have any meat, but even with mushroom stock, it was really good.
I made this recipe tonight and it was delicious! I had to make a few substitutions but I still really enjoyed the flavor. I only had chicken powder and bacon on hand instead of dashida and pork belly. The rice water was a nice trick too. It all came together very fast! I'm keeping this in my pocket for quick weeknight meals. Also a bowl of rice is imperative! Thank you Aaron and Claire for always sharing great content. I love your channel!

You, my friend, are a genius!! I am so excited to try your methods, especially the lard. I also love the options to add artificial deliciousness or not. That is a true foodie. My kimchi jjigae secret is usually the pre-marinated jeyuk bokkeum I buy at H-Mart, and I use Japanese Hondashi for the broth so I get that sweet, sweet MSG lovin'. Haha!!
Just moved back from Florida and my cabinets were bare for all but 20 minutes. I moved next to an H mart and needless to say, my heart is so happy when I go there! Reminds me of my time in Busan and Seoul! I want to go back someday soon but for now, I got my kimchi, and my tofu, and it’s time to make some stew on this cold day here in Colorado. I have just made my first kimchi jjigae and added a little bit of lard, as you suggested. I made beef stock myself the previous day so I am not sure how it was compared to the one you used, but I have to say the kimchi jjigae was DELICIOUS and reminded me of Korea. I absolutely loved it! I always make this kimchi stew whenever I have kimchi in my fridge. So gooood. I swap pork belly to thin-sliced beef shortplate and let the broth simmer to almost 20ish minutes to make it even deeper. It never fails! Thank you! This one’s a keeper😊

Hey Aaron, I know this is a pretty sacrilegious thing to say but could you maybe do a video on some cool vegetarian korean dishes? My mom is vegetarian so I want to be able to make some vegetarian korean food for her that isn't egg based.

@@rightyourwrong Well, if you had rice and some side dishes, some kimchi, soup with doenjang and tofu, you wouldn't starve! From the US point of view Korean food is highly seasoned and some dishes have strong sauces with a dark color (using chunjang or gochuchan), I think you could get away with a lot! Jajangmyeon could probably have any ingredient in it, it would be hard to tell! I have for sure seen it in restaurants with frozen mixed vegetables and chunks of potato and a little meat, I would hardly know if that meat was missing in the black gravy. I think you have a chance!

My mother makes kimchi with cabbage and daikon. The sour kimchi is the best. We make kimchi fried rice often. For kimchi stew I like to use bean paste as soup base.

Made the first recipe yesterday with my homemade kimchi.. That was amazing!! I also added some onions in the broth and substituted the mysterious beef powder with some knorr beef stock. Added a bit of red pepper paste too to make it a bit sweet. That was so good! Thank you so much!!

Here in the US we are now starting to get Vietnamese fish sauce. Before that there were Vietnamese brands made in Thailand. And of course Thai brands, one kind from China, and usually at least one or two from the Philippines and at least one from Korea. I think there are too many kinds now, how can I figure this out? I keep hoping that someone will write a long authoritative review. I mean, here we see Three Crabs I think, but in a big store there might be Two Crabs, and One Crab, just from that one company! WHAT'S a GOOD NUMBER of CRABS? I've asked a lot of people and they all just laugh, nobody knows! When I was a kid there was just one brand, the worst cheapest one. It was easier for the customer and better for the store!

Oh my goodness that's what was always missing in mine - rice water! And your comment that it's used a lot in Korean cooking - it makes sense! Why did no one else ever mention that? And I make a non authentic version sometimes with smoked meat instead of pork. It makes the whole thing deep and rich. Soooo good.

I have 3 months old kimchi on my fridge (homemade) and now I'll be eating kimchi jjigae the whole week, I'm addicted to it since I ate it on my local Korean restaurant ♥ it's good for the sooooul ♥
Kimchi jjigae is my favorite korean stew, ive been making it for months now but I never tried using beef bone stew (or adding lard). I will try this next 🤩

Unfortunately we don't have these restaurants you're discussing, but the good news is that all these ingredients are easily available! Pork belly is available now, and it's easy to find fatty pork meat in different forms. Don't listen to those people who are worried about MSG, Dasida is a great product, there are several flavors and they're all good! The Korean products are much better than the soup powder you might be thinking of, "bouillon cubes" kind of stuff. There are also Korean products "super salt" and "super seasoning". They're very minor ingredients! I use MSG all the time, and might buy a pound every other year.

LOL I do this too. The beef seasoning makes it much tastier. I like my kimchi stew to have a seafood taste so I use the clam version instead and I also add a piece of kombu seaweed.
I don't eat pork so my guess is to use another fattier meat alternative(eg beef, lamb). My best guess for vegetarian is to use vegetarian stock, maybe us mushroom(or another veggie) instead of meat. I don't know if this might work but would vegetable fat(shortening) instead of lard give that fatty aspect?

I love mixing bacon or ham with Kimchi...it just takes it to the next level with the pork fat. Its a combo made in HEAVEN!

I'm gonna be honest, I came straight to watch the kimchi jjigae recipe as soon as the pin popped up on the bbq video and WHAT HAVE YOU DONE TO ME?! I have 3 months old kimchi on my fridge (homemade) and now I'll be eating kimchi jjigae the whole week, I'm addicted to it since I ate it on my local Korean restaurant ♥ it's good for the sooooul ♥
Kimchi jjigae is my favorite korean stew, ive been making it for months now but I never tried using beef bone stew (or adding lard). I will try this next 🤩

Unfortunately we don't have these restaurants you're discussing, but the good news is that all these ingredients are easily available! Pork belly is available now, and it's easy to find fatty pork meat in different forms. Don't listen to those people who are worried about MSG, Dasida is a great product, there are several flavors and they're all good! The Korean products are much better than the soup powder you might be thinking of, "bouillon cubes" kind of stuff. There are also Korean products "super salt" and "super seasoning". They're very minor ingredients! I use MSG all the time, and might buy a pound every other year.

LOL I do this too. The beef seasoning makes it much tastier. I like my kimchi stew to have a seafood taste so I use the clam version instead and I also add a piece of kombu seaweed.

Hey Aaron, Is there any tips to make this for vegetarian? or people who don't eat pork?
I don't eat pork so my guess is to use another fattier meat alternative(eg beef, lamb). My best guess for vegetarian is to use vegetarian stock, maybe us mushroom(or another veggie) instead of meat. I don't know if this might work but would vegetable fat(shortening) instead of lard give that fatty aspect?
