2. Matcha & Salted Caramel Tart 🍵

  • Here's a relatively simple but still delicious tart. I've never been the biggest fan of white chocolate ganache, but recently I made a coconut and matcha ganache cake for the holidays and the addition of matcha in the white chocolate was quite delicious. I've also always been a big fan of the matcha and caramel combo so that about sums up how this tart came together :)
    Salted Caramel:
    (recipe from sallysbakingad...) a very solid and reliable blog, funny thing is, when I worked a brief stint in a professional kitchen my freshman year of college the head pastry chef also used recipes from this blog
    1 cup granulated sugar
    1 stick butter (1/2 cup) ~ as usual I rounded up the butter becuase I don't like dealing with small bits of leftover butter in my fridge lol
    1/2 cup heavy cream
    1/2 tsp sea salt ~ I like using sea salt in my caramel over regular salt but i used less because sea salt can be quite strong of a flavor
    Chiffon Cake (single serving):
    (well this is interesting, I can't seem to find the actual link to the original recipe but here's the website I found it from maomaomom.com/)
    1 egg yolks
    5 g sugar
    1 pinch salt
    1 tbsp cup oil
    1 tbsp milk
    25 g cake flour
    1/8 tsp baking powder
    1 egg whites
    25 g sugar
    bake 335f for 15-20min
    Matcha White Chocolate Ganache:
    1 block of white chocolate (4.4oz / 125g)
    4.4 oz heavy cream
    *optional 1/8 tsp sea salt (I didn't use it in the video but I would recommend this addition)
    1 tsp good quality matcha
    *use a portion of the ganache to fill the tart, then let the ganache set. Once it's set, whip with a whisk until light and use it to pipe the decorations on top of the tart

    May i ask why size ringmold did you using?
