I wonder if you've ever tried one of my favorite camping breakfasts, an old Navy dish called One Eye Jack. Take a piece of bread and press a drinking glass or empty tin can into the center of the bread. Remove that center circle (this will be your toast.) Toss some butter in the pan and put the bread with hole, and the removed circle in the pan. Crack an egg into the hole in the bread. When the first side is browned flip it over. That's a One Eye Jack.

Ya, there's lots of names for it. Egg in a hole. Egg in a hat. Egg in a basket. Bird in a basket. Toad in a hole. Frog in a pond. And 60 or so other names.
Duck Landes - oh man that brings back fond memories. When I was a kid my aunt and uncle would come up to visit and stay in a caravan. Us kids would rush out in the morning to have breakfast in there with them (tiny caravan), and my aunt made that for us! We loved it. Gotta be at least 30 odd years ago, and sadly they have both since passed. I’ll have to try it again. Thanks so much for bringing a lovely memory back to me.
Oh yummy, that corned beef hash and egg sounds so good. And then garlic bread! Amazing. Glad there was no spills or burns this time.😀

Moved to the country, and started watching your vids. Since then you have inspired me to spend more time outdoors. I’ve used a chainsaw, split wood, campfires galore, I bought a cast iron pan and fire grate, and I really enjoy the quiet. My husband and I have been married 30yrs. We have date night every Thurs. This week, we plan to cook over a fire in a cast iron pan for the first time ever. And we are having hash and eggs over Texas toast. Ha! Thanks for your inspiring vids😊💜

Man here I thought you had not published the same day because you felt so bad over experiencing errors in yesterdays episode. I agree snow can be bad but ice accumulation is devastating stay safe.
I am binging on your videos ! I'm new here and you are an amazing woman.i feel like I'm right there with you . And learning so much about nature..wildlife and watching you build .it's fun watching you and learning as well .don't know how I found you ..but I'm a Christian and there's so much bad on RUclips..it's refreshing to find someone who loves and lives for the great outdoors..I can relate to it!!
We've had a lot of rain, freezing rain and ice this winter in Maine. People here get out their sidewalk crampons to get around town ;)

Yaktracs or Stabilicers will let you walk on icy ground without breaking a hip. They are like chains for your feet.

Hello Brooke, happy day seven. You were wise to bring the canvas tarp to give some protection from the elements. What a breakfast: corned beef hash w/egg, Texas toast and coffee. The only thing missing is a side order of Sweedish oatmeal pancakes with walnuts and real maple syrup. Awesome breakfast. Take care out there and have fun. See you on the next one. 🤗

OMG corn beef hash!!! Looks away tries to ignore it and remembers my addiction to corn beef hash I thought I would never beat
It has been almost a year now I have been off the corn beef hash with help from CBHA (Corn Beef Hash Anonymous) LOL
Screw it I'm going to the store now and buying ten cans...No try to resist try not to think about it
Funny but true story I liked corn beef hash so much I was eating a whole can just about everyday there for a while until I realized that might not be a good thing
But it tasted so good :)
No I did not eat anything else with it and I just cooked up a can of corn beef hash and that was a lunch for me LOL

Nasty day there today. Yes coffee is great in the cold weather. I'll have to try your hash on a shingle. I like my cubed fried taters, cubed spam, chopped onions, and when it's done, I put a few eggs over the top and scramble them in the mix. I take it off the heat, cover it with cheese, and put a lid on it so the cheese melts. Talk about good.. be careful with all that ice, wouldn't want to see you get hurt. See you on the next one.

I love your channel, i have been sick all week and looking for something to watch found this series i have so enjoyed it and when i fell better i'm out on my property and cooking some of these great breakfast, my favorite meals are breakfast foods yummm, i like scrambling my eggss into the hash, i'll be watching all of them

That's a stick to your ribs meal. I use two old cake pans to keep my food warm while I'm still cooking. Lock them together with binder clips. Put near fire but not in coals. Then again I often eat one item at a time so it doesn't get cold.

For me... being in the Redwoods is souls cleansing because ..... because it makes me feel so small underneath those towering trees and the beautiful ferns... and toppled trees n rivers.
.... walking the Redwood forest is ....is....remembering how small you are and how big and awesome God is.
He is truly so beautiful Brook - as you know.

That looked delish! I'd change it to the roast beef hash for me. Never thought of using garlic toast for eggs even tho I put garlic salt on my egg toast, lol. Gonna have to try that combo. Yum!
