This dish is a common side dish in Chinese cuisines where I live. They are actually pretty delicious. Some areas that sells fried oyster omelette might provide different sauces to accommodate the taste similar to the one shown in this video. I recommend trying it!

For those that never had this before, the dipping sauce is usually tangy and slightly citrus with a little spice to cut through the greasiness and starchiness of the omelette. Some places serve a less starchy version, the typical omelette.
However, in Taiwan a sweeter sauce is used instead. If I'm not wrong it usually contains a hint of plum.

In some Hawker stalls they put eggs more then the seafood and that makes not genuine. It's a nice actually. Those who havent try can try its nice when it's hot from the wok🤤

My idea of a perfect dish would be potstickers inside deep fried spring rolls, then made into an omelette and enclosed in a pancake, then put into a taco and placed on a pizza, then layered into a cake, cut into slices, each slice coated in a batter, deep fried and served on a bed of lettuce because I am on a diet.
