    What you described with boiling down the whey for hours is called getmese. Mese=the brown sweet stuff. The cheese itself is called getost. Ost=cheese. Get=goat. With love from helene from sweden

    Rather than moving slower or at a slower pace, I view it as moving and living with intention. As an Italian, we always lived and moved with intention but i can see how others may view it as a slower pace.

    I just got done digging through very hard ground to finish the trench that will bring electricity to the home we are building. My dream is to one day be cooking with you guys in my kitchen on my homestead. I am sipping a glass of wine watching this, and you all have inspired me to keep going. I'm so excited to cook this meal myself in my kitchen. I wish I could be there with you, but I'm so glad you shared this adventure so that in a way I am. Thank you!

    Beautiful video! It was like we were traveling along in the busy market with you. The fresh produce is enviable. I’m definitely going to have to try this recipe. Good for you for bringing the proper tools along with you to do your job well. I don’t know if you stayed at Airbnbs but I know that a lot of the time they will have barely sharp knives and maybe a few pots and pans. This was such a joyful time that you shared. Thank you.

    Norwegian geitost is 35% goat and 65% cows milk, it is a brown cheese tasting sweet, it came from a girl on our neighbourfarm in this village- that cooked her cheese a bit to long by accident- it takes hours of boiling- it is not pressed and stored ricotta

    Interessting whar you said about the ricotta cheese, did you compare to the brown goatcheeese or the white one? I ask because I wouldnt dream of putting brown goatcheese on pasta :D its reserved as spread for bread or as a flavour to gravy. Greetings from Arctic Norway :)

    Goodmorning from the Netherlands, just left Italy last month after a three week holiday. This video brought me back again! Loved it! ❤ I am wondering, how did you manage the homestead lifestyle while the kids were younger? My son is 1 year, I find it hard to find time to make a nice big meal, while before he was born I would love to stand in the kitchen voor 1,5 hour or so. I always think, how did Shaye do this?? 🤯😅

    Pasta looks really good as you're making it. After salting the eggplant, do you rinse it off and dry it?

    This was really fun to watch. I'm chopping up some foraged mushrooms today. Are you familiar with "the chicken of the woods"? I harvested a huge one, yesterday.

    I love all parts of Italy. I actually have a house there and we are moving there soon. (My husband was born and raised there) I don't want to sound rude but I do want to let you know that arancini is pronounced aranchini. The c is pronounced ch. I know it is silly but it is like when people say bruschetta with an sh instead of a hard c. I hope you don't mind. Lovely video and lovely recipe.

      Hi, a sicilian here. Those arabic writings are foundable only in Palermo, and they are basically tourist attractions, with the intention of showing how some places were called in arabic during the muslim domination. We sicilians can't understand them, but surely they are a nice artistic touch...

      Professional chefs bring their own knives to whatever kitchen they will be cooking in, as well as to classes where they learn new techniques. Share takes her craft seriously and if that is wrong then I don't want to be right. If someone came to cook at my house and brought their favorite knife I wouldn't bat an eye, I would appreciate their eagerness to jump in and help prep. And sponsorships like this are a big part of Shaye's ability to keep putting out beautiful content so if only for that reason I am happy to see these knives in her hands, wherever she happens to be.

      I kinda thought that on the first Italy video (after watching years worth of homestead). I got blasted in the comments. Have been reluctant to watch this one, however I took a step back to enjoy how she wants to present the content. All big RUclipsrs have sponsors. I don't like it either, but look at it from their perspective - growing channel, chance to travel, cooking with the best utensils, etc. I'm jealous most of the time. If you ever watched the winner of a Nascar race, or any sporting event, they will thank 10-15 people, and have the sponsors name blasted everywhere.
