- 'Tis the season for fresh salmon! We process our catch from Seward and make fresh Alaskan Sockeye sushi. After a quick trip to the woods for spruce tips we harvest spring greens from the garden for a delicious pan fried and glazed salmon dish.

Watching Eric and Ariel stuff their face with fresh salmon and caviar never gets old. Love it! 💕
Stuff their faces is kind of abrupt. Consuming with intense gusto is more gooder.
They show us how to use products in different ways. Even if you go to a farmers market to get the ingredients. I've never been a fish person, except for canned tuna😁, but I once had fresh salmon with a sweet glaze, like they made, and enjoyed it very much! I didn't enjoy the price!

I loved going to Kenai and dip netting for salmon! My team part was cleaning the fish, right there on the beach. Being a Cajun country girl, this was a new experience for me, at its best!
Being poop-bombed by seagulls, I just had to laugh at myself. There is no room for vanity in the real Alaska! And, I too love the beautiful color of the salmon filets.

Lol right when you laid those salmon leftovers into the chickens' feeder, they stopped in their tracks like, "Whoa, hold up, is that fish?! 😋" Only a few of them were interested in the regular chicken feed, but the whole flock came over for the salmon.
Yeah you can hear it in their little chicken noises, they were like “what? Salmon? Yay!”🐓🍣😄
Chicken loves all protein and the joy when I let them out after a long winter in their shed is wonderful to se. Jumping after flies and buds in the trees, digging for worms and bugs in the soil... But in wintertime they get a boost of fish to get some extra protein and there is nothing left exept for the spinal column and a well cleaned head!

Great job making the sushi 🍣 Nigiri is pronounced nuh-gee-ree. Just a friendly fyi 😊 Also, don’t forget that the fresh fish can contain tape worms and other nasty parasites. Freezing is recommended to avoid them.

Ok Google says nuh gee ree but in Japanese "I" is pronounced like "e" and "e" is kind of like the Canadian "eh". What they were saying sounded like an African country. Like Nigeria or something 😂.

This is so true, wild salmon is the worst offender for parasites. Last year they made a cured salmon with alcohol and that was OK but this this is probably not good.
I was wondering if I should be a wet blanket pointing this out, but you beat me to the chase. 😉 If the meat is sliced thinly enough, the worms can be seen embedded in the flesh against the light, but the eggs are probably too small to be seen. Even in Japan, fish meant for sushi are frozen to kill parasites before they are cut and served.
Trying spruce tip beer for the first time. It should be ready July 4th. I did try a little taste. I will be harvesting a LOT more tips next year.

You never ceases to make your viewers hungry, when you cook anything! You could cook tree bark and make it look like the most delicious thing there is! That's what is special about your channel. I realize a lot of your equipment and special vehicles couldn't be possible without doing RUclips and having so many followers, but sharing your experiences, which I'm sure can be a filming pain sometimes, brings hundreds of us to Alaska, and allows us to share in your enjoyment, when we will never be able to do what you do.

This has been on my bucket list. I've talked to a couple of airline crew, who on their off days would fly up to Alaska catch salmon and make sushi out of it immediately. Each one said it was amazing

I'm a gal from Hawaii living in a Florida world. That sushi looked awesome. I also make my own sushi and sushi rolls. I like making sashimi on a bed of thin slice cabbage. That is good. Love your channel.

Just an FYI, all Wild & Hatchery Salmon contains parasites, especially tapeworms. I highly suggest you freeze your fresh Salmon for at least a full week before consumption. This is just a friendly advise. I worked many Japanese chef and most of the Wild/Hatchery Salmon they serve has been flashed frozen.
Thank you for the information. I wondered if fresh salmon could have parasites like other types of fish. How does one flash freeze their fresh caught fish?
And also a little hint with your knife: don't chop or cut, but slice. That's why classic sushi knives are long. Long, gradual slices will keep your rolls in good shape.
Does this matter if you're cooking the salmon? Like squirrel has lots of worms but it doesn't much matter as
long as you cook it.

Never heard of making syrup out of spruce tips. Sounds tasty tho. The salmon were so beautiful. I can't bring myself to eat raw meat or fish, but by your comments, it was really good. Wow, you guys finally made something I would never put in my mouth, raw fish or rice, I never liked sushi, and never thought fish should be eaten raw, but it sure looked good pan fried with that salad, keep up the good work.

Dinah, salmon caviar is the darn bestest tasting caviar of them all. It’s fresh, salty bubbles of joy and I love it on my sushi. Not easy to buy in country towns in Australia lol so I have to go without when I make sushi. Michelle

I been watching your channel before I decided to sale our house and did my early retirement at my job. I use to live in Kodiak and Fairbanks. My sister live in Achorage for 32 years. Her family just fish and hunt but you two inspire us . We are moving to Fairbanks in July 2 just waiting for the Ferry. It’s a very expensive move but we love Alaska so much. We just bought 4 acres 4 bedroom dry Cabin. Thank you so much we need more young people like you two. Gresham OR

Please be very careful! Salmon needs to be frozen before you make sushi. We had a trip to the emergency room when we first moved here. Research it online. There is something they carry that will be killed in the freezer.

@@StephenShreds yes, a lot of the salmon I caught in the years I was in Alaska had these little parasites. Freezing for a week or cooking until the internal temperature is 145 degrees or higher is recommended to kill them. You are still eating them, they are just dead. here is another little tid bit of useful info. A lot of the store bought salmon that are pen raised have them as well.
Correct parasites. My wife was so sick we had to go to the emergency room. Freezing will kill them.
Glad someone else said it. The Japanese never ate sushi salmon until the 1970s when Norway started making farms for salmon.

when you eat Nigeria you do not dip the rice side in the soy sauce you are to dip the fish side in it. Also, you should put some Wasabe on the rive before you put the salmon on it also you wrap the seaweed around the Rice and fish. I got corrected on how to do it when I went to Japan back in the 1980s for my job.

Do your own research on parasites in Alaskan salmon. There are three types of parasites. The Japanese traditionally avoided salmon in sushi for this reason. Now Japan imports North Atlantic salmon instead and there has been a rush of salmon for sushi.
There are worms in salmon here, we have talked about that exact thing in several videos. These particular fish did not have many and we looked for them before eating it raw 🙂
I ate plenty of raw Alaskan salmon and never had an issue. Perhaps it's hit and miss...
The belly parts of the fillets, that some might discard are considered a delicacy where i was growing up. They take a prune, wrap the belly around it, fix it in place with a toothpick and then it's all smoked together. Fatty, delicious and totally worth a try 😍

Try mixing a fresh salmon in a 3/4 inch dice with some toasted sesame oil, soy sauce and green onion for an amazing quick Poke.
