During WWII things were rationed and any kind of meat product was used to feed the troops. Shortening was made with cottonseed oil in the 40's and 50's and probably more available to purchase. It probably was a lot cheaper.

I am 71, I have my grandmother's bread recipe that she got from her aunt when she was a young girl. 1 cake of yeast equals 2 envelopes of yeast I think. It is a simple potato bread that uses the sponge method. Makes about 10 loaves a batch. Family favorite.
Whenever I hear the term bread sponge, I think of my sourdough starter that was begun by my paternal grandmother during the goldrush here in the California Sierras in the 1860's. The only thing I cannot do to feed it is using town tap water or store bought flour, So, I use our amazing Sierra well water and grind fresh flour as needed. The whole wheat berries I grind into flour are from a non gmo farmer in Montana. Store bought flour in the 1940's was better than store bought flour these days. Read somewhere that fresh ground flour has all the nutrients, whereas store bought flour had to be enriched with folic acid and has more gluten.
I love old timey recipes. I would like to try this one. I make bread a lot. In all these years I still haven't found a favorite. I'll be turning 70 in the Spring lol. All home made bread is good, right?. I like the idea of having that sponge all ready and just adding flour. I would rather use lard than crisco. Have you tried it with lard? It should work fine. no it is a simular recipe I had the recipe verbal in the video along with text :) you can copy it and right it down or use the link and make a big batch and it stores in the fridge 7 days :)
in this video you make the yeast sponge and then take out 3 cups out for 6 cups of flour .the rest just keep in the fridge till ready to make more bread you never add flour to this it is a one time batch made somewhat like sour dough bread but you dont feed it

My grandma used lard all the time but she also swore by crisco for certain things (fried chicken for example.)

Sponge would be what I have heard as starter. I have seen many sourdough starters online, but not yeast starters.
