I've been to Tuscany but I'm sure we didn't have these so I must make them next week! That ricotta cheese trick is impressive and I can't wait to do it. You ladies are like favorite Aunts always cookin it up! ❤️
For several years I've wanted to try making these. You just made it look easy. I'm going to get the ingredients and make them day after tomorrow. Thanks for the informative video and recipe.
This is the second recipe I've tried to make spinach and ricotta gnudi, and it's so much better than the first one - a real winner. With the first recipe, the gnudi came out chewy and doughy. I served them over marinara sauce, per the instructions, and the sauce totally overpowered the taste of the gnudi. In this ATK recipe, the gnudi come out light and delicious, and the amazing tomato-butter sauce is the perfect complement. Also love the ricotta cheese trick.
I'm going to try these. I've been using ricotta to bind my meatballs together instead of egg and bread crumbs for a while now, never thought about spinach or a dish like this.
We made these and they were delicious!! There were so many that we tried to freeze some before cooking, which didn't work out at all... when we tried to boil the frozen gnudis, they turned to mush. I do wonder if they would have withstood freezing if we had cooked them first. We'll report back next time we make them :).
Would anyone know of a good replacement for the flour? Im thinking about maybe trying it with corn starch or rice flour, but I'm not sure how either would work for this
I am definitely going to try this out, but will up the garlic because it's against my cooking rules to use less than 6 cloves, since garlic is life. 😂❤
I am not a fan of spinach. What other green would work with this fantastic dish? Also, drain frozen anything in a colander over a bowl if what you're thawing has a desirable liquid and you can save your hands a little of work...
Stop playing Julia, you'll have to have an extra superior sharp knife to cut those tomatoes like that. So what should you buy in order to do that trick? Lol
It works! My knives aren't "extra superior sharp" and I've never had a problem using the two lid method. I first saw Martha Stewart do it, then Ina Garten. Give it a try.
I'm the same way. However, unbleached ("supposedly natural?") paper towels, napkins, kleenex, toilet paper, etc. can all be found online or in your local health food store. The manufacturers might even claim their products to be organic. Such items are expensive, so there's *that* tradeoff. Also, I would imagine one could use a super-clean 100% cotton kitchen towel.
I saw that side eye. “I can be a little rough “. Lol.
That was TOO funny 😂
There was a lot more that the side eye
That is so funny!!!
I loved that part, Bridgitte is very funny
Gave me a chuckle!
I really loved making this recipe, so so good! Thank you Julia and side-eye Bridget and the whole ATK team that helps to produce the show 😉
Never get tired of you ladies. Keep up the great work!
Bridget's side eye is gonna have me laughing for days. Great recipe.
Beautiful dish! Julia is an excellent chef! Thank you 🙏🏻❤️
We made this today, and it was amazing. We can’t wait for our leftovers tomorrow at lunch, the perfect Monday comfort food!!

Yeah, I've never seen that before. Very clever!

You two are the best , have watched for years and Love Ya !!!❤❤
Such an excellent chef very professional TY ❤️
Never heard of this lovely dish! Thanks ATK team for another great recipe ❤️
They are called gnudi from the fact that they are basically the filling of ravioli without the pasta! Saw this dish originally on Lidia Bastianich.
I'm going to try these. I've been using ricotta to bind my meatballs together instead of egg and bread crumbs for a while now, never thought about spinach or a dish like this.
I've never even heard of this dish before!!! 😳🙉😋 looks delicious!
My Sicilian mother in law made them. Yum.
It Looks Yummy.
So much going on w this dish that I never heard of that I must make asap! Great video!!
I've made this. It's wonderful!
Use a ricer to squeeze liquid from thawed fzn spinach.
Love to see 2 of you on the same show again!!
They never left, but had to do things separately due to Covid and obviously, this is I think the last season (2021) we are seeing now.
You girls are wonderful!!!!!!!!!!
Hello, I intend to try to prepare the recipe. Thank you.
Can't wait to try, thanks Julia.
This looks delectable and is easy plus uses ingredients we often have in the pantry or freezer/fridge. I plan to make this soon.
Can gnudi be made in advance and frozen until i want to serve them? Should they be frozen cooked or uncooked?
Love you guys!
Wow!!! How scrumptious! I totally cannot wait to make this dish. Thank you so much for sharing!
Any video with both Julia and Bridget in it is a video I want to see. This looks delicious!
6:36...that look from Bridget...😄
Melt in the mouth .Those look so so yummmy
This looks absolutely delicious!
I think Ill try this!
Can one freeze these gnudi seperate on a cookie sheet. Once frozen place in a container to use later in?? Thank you for taking my question.
yummo two of my favorite things!!
That looks so good... I'm heading back out to the store to get the ingredients I'm missing!
This looks beyond delectable❗ 😋
This sounds so good!
Can’t wait to try this. Looks delicious! Thanks
my mom used to make this with butter parmesan and sage on top.

Thanks for sharing ! I was wondering if freezing would work. Now we know!
Great recipe. Thank you ladies. What can I substitute for egg whites?
7:45 Gnudi under a Tuscan sun :)
Looks so good.
Never seen that top-to-top cherry tomato cutting trick
Mind blown lol
Add fresh sage to the garlic butter and skip the basil
Great recipe
ATK. Greetings from California
Salutations 😋
Weird timing that I had a dessert-like gnudi the other day for the first time ever. Definitely want to try this.
Would anyone know of a good replacement for the flour?
Im thinking about maybe trying it with corn starch or rice flour, but I'm not sure how either would work for this
I tried to make these in the 90s and they dissolved in the boiling water. fail! Glad to get a recipe with tips that might make it a success this time!
Genius!
I am definitely going to try this out, but will up the garlic because it's against my cooking rules to use less than 6 cloves, since garlic is life. 😂❤
Wonderful, I was expecting the addition of a grind of nutmeg to the spinach. Either way, gnudi are terrific.
Missing some nutmeg indeed
I have been enjoying watching you guys cook for at least 15 years or more. I notice that Christopher Kimball is not around anymore, I hope he's well.
6:35 That! Look!
Goodness
How interesting
12 year old me cannot watch this without giggling
If there were a magazine dedicated to gnudi, I wonder what it would be called?🤭
@@truckerenoch8824 Gnudi Girls? Gnudi Monthly? Gnudify? Gnudi Beauties? I like Gnudi Beauties.
@@mattwilson8298 😂
I'd be running to the mailbox like Billy Madison, 'gnudi magazine day, gnudi magazine day"!
That good
What genius! Folding ricotta on itself. Cutting tomatoes between two deli tops. Panko crumbs…
Not me having leftover ricotta and coming across this video. Lemme pull it out the freezer.
Sound like they are saying ‘Nudey’!
🤣
So
I wish there was a magazine dedicated to gnudi. I wonder what it would be called?🤭
Juggs?
Julia: "I can be a little rough in the kitchen."
Bridget: [Uh... Phrasing...]
6:30....
LE spinach
I am not a fan of spinach. What other green would work with this fantastic dish? Also, drain frozen anything in a colander over a bowl if what you're thawing has a desirable liquid and you can save your hands a little of work...
Chard would be good
Turnip greens, or any tender greens you like.
Anything you want
It looks Like Julia didn’t taste the Gnuddi 😳 is she allergic to dairy products ?
Sorry but Bridget's eyes in this episode is kind of creepy. Normally they are warm and friendly. Tasty and simple recipe though.
So frustrating that you can’t print the recipe without an email.

Not a fan of paper towels in my food.
really....true ricotta is made of WHEY and not milk! i think this product is more like topfen/quark like in Austria, germany etc.
So
I’m thinking that there are issues with paper towel transferring undesirable things to ricotta
like what?
@@lisafield4154 like bleaching agents, glue, fibers etc…
Maybe use cheese cloth or flour sack towels?

@@diamondtbar9818 How about a simple strainer?! A novel idea 💡
If you're an aficionado of gnudi are you a gnudist?
My inner 12 year old boy keeps giggling at hearing "nudie"
