Sookha Kala chana is a simple and quick dry chickpeas curry which is prepared with soaked and cooked black chickpeas known as kala chana in Hindi. In this recipe, chickpeas are boiled first and then sautéed with spices. This recipe doesn't contain any onion or garlic. This goes so well with flatbreads like roti, chapati, paratha or naan.

Ingredients:

For the kale chane / black chickpeas - 1 cup (soaked overnight)
Oil - 2 tbsp
Cumin seeds - 1 tsp
Mustard Seeds - 1 tsp
Pinch of asafetida
Ginger, sliced - 2 tsp
Green chili, sliced - 4
Red chili powder - 1 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 2 tsp
Amchoor / dried mango powder - 2 tsp
Salt to taste

Instructions:

Soak the kale chane / black chickpeas overnight in enough water. Next morning, drain the water and rinse well.
Pressure cook the chana with 2 cups of water and salt for 2-3 whistles on high heat.
Or boil in a pan until soft and cooked, boiling in a pan would take about 30 minutes.
Heat oil in a broad pan, and add cumin seeds, mustard seeds, and asafetida.
When the seeds start to splutter add green chilies and ginger.
Stir well and cook for about 2 minutes.
Now add the chili powder, turmeric powder, coriander powder and dried mango powder and roast well for 2 minutes.
Add cooked chana with water and cook for 5 minutes.
Add chopped coriander and mix well.
Remove from heat and transfer to a serving dish.
Your kale chane are ready!

what should be the gas flame while adding masalas?
The heat should low when you add masalas. This step prevent masalas from burning and sticking to the pan.

No, you can use any brand. Just make sure it's good quality.
How can I make this if I don’t have a pressure cooker?
If you don't have a pressure cooker then you can cook it covered in stove top pan. But it would take at least 30-40 minutes to cook. You can also add 1/4 tsp of baking soda while boiling. This would make things go faster.

The water that you soaked your chana in should not be used. In fact for health reasons one is advised to keep changing the water that you soak your chana in. That water has certain enzymes released by the seed that are not good for our digestive system!
Thanks for your valuable information. However, I don't use the soaked water. In fact, I give a good rinse to soaked beans before cooking them. ☺️
That is true , infact the water has phytic acid /phytates which inhibits absorption of minerals like calcium. That would prove detrimental for dental health
