Cooking steaks in a cast iron pan, IMO, is the best way. On a grill, your cooking surface is minimized to the metal grates that the steak is cooking on and will tend to be dryer because the juices will fall through the grill. Where as in a pan, you have a solid cooking surface of the whole steak. When seasoning, just use salt, anything else just sits on the outside of the steak, whereas salt will be absorbed into the steak.

I've cooked 2 A5 NY strips and I really believe simple is better with this type of meat. I did only salt and pan seared. Usually I like to do a butter bath on steaks, but for A5 wagyu, the meat can stand on it's own. One cool result of the pan sear method is that the steak has so much fat that it renders during the cook and essentially fries the outside. So the inside of the steak is juicy and fairly rare, but there's almost a crunch on the outside from frying in it's own fat.
If you ever get a chance to try this cut of meat, go for it. I'm sure any way you cook it, you will enjoy it.

Like 6 years ago i graduated from university and went out celebrating with my now wife and parents. Due to the occasion we shared some Japanese Kobe Wagyu A5 prime cut (4 people sharing 75-100g). It's the first and only time I've ever tasted meat like that.
The meat was good yes, but at the same time, in my humble opinion, also a bit too much. Almost 'cloying' (I think that's the word). As he says at 6:30 "It's like jello". The meat is so tender and fat that it almost feels like eating pure fat or something like jello. In my memory it actually lacks structure. I remember it as being too tender believe it or not. I don't think I would be able to finish a whole steak from meat like that.
Do I regret doing it? No, I didn't pay the bill :-P Would I try it again in the future at a special occasion if I had to pay myself? Probably yes. Is it worth the money? No, not as I remember it. With that being said, it is also a special experience to taste meat like that and have the feeling of "I just had the creme de la creme of meat. It cannot get any better than this". Is it really the creme de la creme of meat though? If the Kobe A5 was just presented to me as any other meat, I think, that from a blind tasting test, I would pick something else (and I'm a guy that prefers tender, fatty cuts like ribeye). Kobe A5 is just a bit too much in my opinion. If you love to eat big bites of *only* the fat at the edge of your steak, without any meat, then Kobe A5 would probably blow your mind.

Last Saturday we tried these steaks. I understand you 100% Guga. It's one of the most peak life experiences ever. Your whole body wants to cry from absolutely pure happiness. We decided to open a couple of Mouton Rothschild (1998 and 2005) with the steaks and a 2003 Yquem for dessert. We were at a friend's mansion by the lake, perfect weather, we were in an immense garden illuminated by at least a hundred medieval style torches basking us in such an impossibly beautiful warm glow, and for the first time in my life I cried because how insanely perfect everything was. I cannot even describe with words how special this evening was. I remember one bite of this godly perfection on earth followed by a sip of 2005 Mouton, it was definitely in the top three best moments I have ever been blessed to live in my life. If I could perfectly reproduce one evening for my last moments in this world, it would be it.

I have Elk steaks marinating in fresh Kiwi to tenderize them, now I'll cook some with fresh eggs for breakfast. You two can make me so darn hungry with your descriptions after each bite. I have enough Elk for supper too!

honestly, wagyu could be cooked to just under medium, you want the fat to render and separate the fibers more. Medium rare is still fine too. I love it when it is a little more cooked than medium rare and a little bit rarer than medium.

Guga videos are always so good and mouth-watering! I love how he's providing side dish recipes to go with the main event. I also thought he was going to cook the 1 thick & 1 thin cut on the grill and 1 thick & 1 thin cut on skillet to be less biased, but instead, he cooked the 2 thick cuts on the grill and the 2 thin cuts on skillet. =D
