    Congratulations to Patrik. Look how smart we all now look to be following April! How much of an issue is roasting so close to the competition (perhaps not giving the coffee time to rest)? Or does this open up the possibilities for our own home roasts (I cup the next day but don’t drink the coffee, wholesale, until it’s had time to rest).

      We normally rest our Espresso 3-4 weeks from roast. It's rare that the coffee ever taste better before 2 weeks than what it does after 2 weeks. But all coffees are a bit different and in this case it still tasted okay - however, it could have been much better with some rest.
