easiest and most stunning dessert. been doing Swiss meringue for these for ages. i add the corn flour only when it is a rainy day as meringues don't work well when the humidity is high. it used to be our Easter dessert but with covid and no guests, not much of a reason to do it :( I top it with forest fruits mostly sprinkled with a bit of balsamic vinegar. oh well... thanks

Just made a pavlova the other day and mine was no where near crispy. Now I know I need a hotter oven. Will have to use these techniques nice time I make it.
What's a good tropical fruit topping for pavlova? I live in a warm country and we don't have cranberries. Also can I make the merengue base ahead?

So this meringue is a Swiss meringue which is a cooked meringue it's more stable than a French Meringue which is uncooked
All it's missing is Tchaikovsky.
Can this be made without sugar for a keto version? If so, what sweetener could be used?
I'm no expert but my husband is on Keto and he uses Stevia instead of sugar for anything and it works pretty well.
Why choosing vinegar instead of cream of tartar? anybody knows?

I followed this recipe carefully and the meringue base was wet, chewy and sticky. I'll try it again without cooking the egg whites first.

As an Australian who makes Pavlova all the time for family events, I can say this recipe method is all wrong. The goal is height, with crunchy cracked outer layer but with marshmallow in the middle.

Just vinegar. Room temp eggs and a super clean bowl. And I certainly don't need to do any double boiling business.
Let me say I like and have subscribed to your RUclips channel for years, and watched your TV channel for many years before that. -- But I think this is the second or third replay of the Pavlova episode, and how many of your millions of viewers if given the choice of deserts would choose a Pavlova? There are so may great episodes to pick from to replay that would better represent you viewers

The mint was a nice addition but holy hell is that merengue too sweet
Ok, you say you want to make it easy... and then you pull out the double boiler and a instant thermometer.... NO NO NO. Very disappointed with this recipe.
