- Always keep to try the local food, my first dinner in Jaipur was a Rajasthani Tali. I wasn't feeling so hungry until I grabbed a quick lassi at the Bapu Bazar market and that perked up my appetite.
Rajasthani food is vegetarian as it's a part of India with a massive Hindu majority population. You pretty much need to get used to eating veg in Jaipur. Non veg restaurants do exist but certainly aren't' everywhere.
The restaurant that I went to, LMB (Laxmi Mishthan Bhandar), is rather famous in Jaipur. It's famous for it's massive Rajasthani Thali which provides a sample of many different Rajasthan foods with unlimited refills.
I didn't even know about the unlimited refills, otherwise I would have went there on a more empty stomach. I definitely didn't get the full value out of that meal, which is definitely expensive by local standards but a nice treat and a perfect way for a tourist to sample the local food.
As you'd expect in an expensive restaurant, the staff are very well trained and speak English well. That meant I was able to get a good explanation of the food. It's always good to know what you're eating. Half the time in India I don't know what the food is, although that never stops me from trying it.

Dal Baati Churma is the traditional Rajasthani cuisine just like Masala Dosa is from South India.

The manager and staff seem so sweet in this restaurant! Understanding that a foreigner may not understand their way and combinations of eating. I'm super impressed with the service! If I ever do go to Jaipur, will surely try this place out!

LMB - Laxmi Mishthan Bhandar is the best place to eat in Jaipur. They cater to a lot of European tourists so their food is jut the right kind of spicy. but extremely delicious. you must have Dal Bati Churma, Bati is the same as Litti in North India but in Rajasthan they eat it with dal and ghee and in North they eat it with vegetable bharta called chokha. Bati is made with wheat flour kneaded and made into small balls and then baked. After baking it is soaked in ghee. Churma is just this bati crushed to a powder and mixed with jaggery or sugar and cardamom.
Gatte ki sabzi or Kadhi ( small lightly spiced chickpea flour dumplings cooked in yogurt based curry , Ker Sangri which is desert beans and capers. It comes in dry form. these beans and capers are soaked overnite and cooked in the next day.
in sweets you must relish Ghevar. in street foods nothing like Moong Dal Kachori or Pyaz (onion ) kachori.
The place where this restaurant is , is the most touristy place in Jaipur. You must visit the Jantar Mantar which is the only complete Sundial. The guides there are very friendly and for just around 300-500 rupees they will explain you all the geometric structure in Jantar Mantar. then there is the City Palace, the Hawa Mahal. This market place sells the best cotton quilts and bedsheets. Hand painted , block prints with vegetable dyes. just incase you want to take some back home.

We eat like gluten but then comes summer and your body say exit... We have another set of yummy food s for summer too but that's not fattening.

Here you can taste rajasthani thali (as shown in this video ) , gujarati recepies , south indian , punjabi thali , and mughalai non veg too in some place of muslim areas ..
Visit here(rajasthan) for sand dunes of jaisalmer , lake palaces of udaipur , forts and heritage palaces of jaipur jodhpur and bikaner ..

Pickles are just taste enhancers. You just take a pinch of it in between the main course. Never take it in large amount that's where most foreigners go wrong and end up not liking it.

Hey Mark, Im glad that you are keen to visit India. India is a diverse country . The culture and the food varies every 500kms. If you are planning to visit India, you should also cover the SOUTH part and the NORTH EAST part. South India is full of culture , heritage and less chaotic than the north. You'll find that it is extremely different form the North. And the North east is best know for its greenery and stuffs. I reckon you'd consider this. Have a nice day.

Still in few 10 cities if u want to visit all india i will give u a list ..
1. Delhi (capital of india , historical places , modern city too )
2. Agra . (Obviously world famous taj and Agra fort )
3. Varanasi and prayagraj (to visit ancient hindu culture of india ) you may go to haridwar and rishikesh (in uttarakhand too ) as substitute to visit ancient hindu culture
5. Jaipur , jodhpur , ( for big forts and palaces , and for royal welcome, if u choose royal hotels )
6. Jaisalmer and bikaner (if u want to witness deserts , sand dunes , amazing forts , lakes in desert search for jaisalmer pics in google )
7. Amritsar (for golden temple , vagha border ceremony at pakistan border , and real punjabi food )
And after this if you want to go to northern himalayas then there is different list .. like nainital (uttrakhand) , shimla(himachal pradesh) , manali , gulmarg , pahalgam (kashmir )..
And if u want to go to south there is again huge list of ahmedabad, surat ,daman and div, mumbai , goa , karnataka , kerala , chennai , tirupati temple in Andhra (near chennai )
And there is another different india in east
List would be kolkata , darjiling , sikkim , Assam , arunachal ..and so on ..

13:59 Desert Beans. Long long time ago when the Dams were not built by the Indian Govt. This area was drought prone. People here could not find fresh veg greens to eat because of the scarcity of water. Only shrubs and weeds would grow. So the ancient dwellers would make the best out of it and try to pluck the edible parts of the shrub growth and make tasty veggie dishes out of it. Thus the name Desert Veggie dish.

I am from Jaipur , India and I like to eat this food with my hands because its taste increases by eating with hands .
Even in some weddings we have to only eat with hands so they not gave us spoons .
