It's unfortunate that she left because she had to take care of her sick husband, who didn't even survive the cancer and died soon after. She came back for a few episodes in the later seasons. But by that point, Bob and (to a greater extent) Midge were already far removed from the rest of the cast in being impactful to the story. So there was no reason for her to stick around.

That’s actually how my dad grills meat.
He doesn’t cook it, he torches it.
A few years ago, a (male) friend of mine and I were invited to a (female) friend’s place for lunch. Our hostess had also invited three (female) friends of hers. The occasion was to try out her new barbecue.
When I offered to take care of the grill cooking, the four young ladies made fun of me for (supposedly) being *sexist* - as if I’d said something like _“Me man. Me make fire. You woman. You wash dishes.”._
They then insisted that the two men make the salad, while the four women prepared the fire and grilled the meat. Being a guest *and* not being sexist, I of course readily agreed.
When we sat down to eat, _everything_ was *burned* almost beyond recognition - the steaks, the hamburger patties, the sausages, etc.
The salad was great.
LOL
That's when you should have said this is would have never happened if a man grilled

If you watched the episode, even this video, you will see that is not why he wants to grill.
Maybe Joanne loved to grill because it was fun for her, and she doesn't get to do it often.
