In Avatar tLA, each bending is based on an animal, and fire bending is based on dragons, so this is super fitting.
Water benders be like: "We learned bending from the moon"

I feel like Elemental Adept would fit in that last feat
Elemental Adept only affects "spells you cast..."
But as a DM I'd rule otherwise.

2) I not it's not optimized, but I'd consider swapping the Dex and Wis improvements. Iroh doesn't fight as often as most of the other characters, but he's always reminding us that he's the wise old man.

Uncle Iroh sure could have used that Purity of Body when he drank the white dragon flower tea. Guess he wasn't level 10 at the time.
I have always been a huge fan of ATLAB, and Iroh specifically. This build fits perfectly for a very noble character.....well done, sir!

Totally forgot about the martial arts in Avatar. I would have build Iroh as an Oath of the Ancients Paladin multiclassed with Draconic Bloodline Sorcerer and the Soldier Background
Uncle Iro has always been one of my favorites.
The problem with building Iroh is that he's a character at the end of his arc, mostly. He's wise because he has already become wise through experience. He definitely didn't start that way, so his initial stats should reflect that with wisdom that's actually pretty low. Which I guess is kind of reflected here, but I would've started even lower. He also didn't learn lightning bending until he grew wise enough to appreciate other bending styles, so he shouldn't have lightning damage so early.
The point isn't to recreate his story, is to create the character as we see in ATLA.

How about Daenerys Targaryen?
Goal: Control 3 Dragons in combat
Variant Human - Feat: Inspiring Leader (low CON means you need the extra hp, and you can boost your dragons)
STATS: STR 8, DEX 14, CON 10, INT 8, CHA 15 (+1), WIS 15 (+1)
Start with Draconic Bloodline Sorcerer because it makes the most sense thematically, you'll want the metamagic later, and CON saves are good.
Then go into Drakewarden Ranger (using all of Tashas optionals). I'd go to level 7 to get Bond of Fang and Scale
Next go into Bard. I like Lore bard for this for the Additional Magical Secrets to grab Fireball and maybe Warding Bond. Go to level 10 to get Magical Secrets and grab Find Greater Steed (pick the Dragonnel if DM allows or just reflavor the Griffon), and Summon Draconic Spirit.
Finish with Sorcerer to get Quickened Spell and Twinned Spell. It should looks like this: 3 Levels Draconic Bloodline Sorcerer, 7 Levels Drakewarden Ranger, 10 Levels Lore Bard.
Now you have your Dragonnel as your steed, your Drake Companion to command with your Bonus Action, and your summoned Draconic Spirit to act on it's own. All three of which you can give 25 extra HP with inspiring leader, and give them Bardic Inspiration. You're now the Mother of Dragons.

Have a problem with you deciding that being a member of the White Lotus is his background.
Iroh USED to be a soldier, a prince, a folk hero, even a wanderer. Iroh currently IS a member of the White Lotus, an order of monks dedicated to peace. The White Lotus isn't a background, it's his current Monk subclass; it forms a central part of his motivations and Identity. I don't know how this would be represented in game, but I figure re-flavouring another peace focused order.
I believe there are backgrounds for all the former life backgrounds Iroh has let go in becoming more at peace with the world and his place in it.
If this decision was made purely for crunch please note that.
