Also, an even greater reason for breaking your eggs in a bowl first is so if there is a blood spot or other unsavory defect in the egg, you don't have to throw out the entire batter.
I watched a RUclipsr mess up a double batch of cookies and had a bad egg. Yesterday I watched her again not use a separate bowl and had to pick out a shell. Ahmazing. Once would be enough for me.

Same here. I use the unsweetened and it’s plenty sweet enough. I made this back in 90s often. Pineapple, banana, coconut and pecans were all key ingredients. I used half applesauce for the oils. Back when lower fat was a thing and I liked the extra flavor.
Couple cake tricks for you(I used to make huge wedding cakes) take a sharp knife & level the crown of the cake before turning it upside down, makes it level. Then do your base layer icing, put it in the fridge til set, then your final icing layer. You won’t have squishing or tipping. Small dowel rods or yes, skewers is what cake makers use. I made such tall layered cakes, I had to use small PVC pipe to keep them from tipping or to hold the stacking cake plates. They actually fit into small pipes so you can stack a lot.

In my 43 years of home making, I have had maybe three bad eggs but I was glad that I broke them in a bowl one at a time. Last year, I had eggs from a lady who was selling them and three of them had developing chicks inside!

Hi Leslie, I made a Hummingbird cake many years ago, (probably around 2010!) and it too had three layers and with a cream cheese icing. From memory it was so delicious, and so rich that you could only have a small slice. The only problem with a cake that high it is impossible to cut small slices. At the time I had wished I only made two layers as it would have been easier to manage. Thank you for making this cake as it brought back some very happy memories. Omg, after watching this I just had to re watch it write down all ingredients, went to the grocery store to get what I needed, it took me a while but I got all baked and iced. It's in the frig cooling the icing. But it was so delicious just testing it. Yes it slid and broke of a little. So I ate it. Smothered it in frosting. Lol. It looks a hot mess but who cares. I think you did an amazing job even the pecan thing was great and I didn't see it lean it looked so tall and wonderful, you are really good. I have used a knife dip in water every time you stroke the cake and it will smooth it out, but you taught me how to make the peaks and that's great! I'll try this one.

I learned that in Jr High cooking class...when they used to have cooking classes. Break each egg in a separate container and add one at a time. 🐣

I put my avocados in a brown paper bag as well. I bring them home there rock hard 2/3 day perfectly ripe. I Love a hummingbird cake! 🍃💕🍃
