I discovered by accident an easy way to pit cherries...freeze then first! Once defrosted they are soft and the pits pop out in a squeeze, then you can go ahead and make your jams and pickles :)
One suggestion: If you are going to make pie (which is a common use for my canned cherries) use the liquid from the canning jars as the liquid for your pie crust. It adds a lot of flavor (and color) to the crust. With the cider this should be especially good.

2 things- my mom was the canner of the family and I remember she used to put the jars in a lasagna casserole dish w/ warm water in the bottom to stop shocking the glass (like the one in your video). And me if I don't have cider I buy frozen apple juice concentrate the darker colored juice one and simmer that w/out adding water to it.
I wish cherries shipped well!!! I need to get a TX variety that I can grow! When I lived in CA I used to pick and can my own and I sure miss that part of CA although I'm glad to be back home in TX!

+My New England Kitchen - If it is canned in a water bath it wont ferment... which is why canning works for anything, it kills the yeasts and bacteria responsible for the spoilage (or fermentation). I water bath can in 1/2 gallon size (only safe for clear juices) for the recommended time.
Does your apple cider have any additives? Our stores carry semi-local cider but it always has 1 or 2 preservatives added to it. I wasn't sure if it would be ok with those preservatives to use it to can.
+Katie Grazier You can certainly pit them - but we use as snacks for the kids - so they will pit them when they consume them! We do pit all of the cherries for jam or cherry pie filling - but after doing about 50 quarts of those, this is a welcome change. If I were going to use these to cook with, I would certainly want them pitted before canning!

Black Cherries came in at the grocery and then went on sale for 1.77 a pound. My daughter and I bought 25 pounds and set at the table and pitted them then we canned them in organic apple juice. They are wonderful!!!!! We ended up with 28 pints.
Speaking of cherries, the last several years I have lost my cherry crop to birds. Other than betting, do you have a good way to ward off the birds? My tree is 25 feet tall, netting is just not practical. Do you think I should shorten the tree? It's a bing cherry tree.
This would be what is known in North America as a soft cider. Soft ciders are more processed than a juice but not fermented so there is no alcohol formed

I made a recipe I found on the internet of baked oatmeal! Real slop! I am throwing it out. It is not Apple Betty that is for sure. Oatmeal cooked in water with a little bit of sugar, butter and salt is great. Can't be improved upon.
I canned some cherries last year. I had left a jar in our camping trailer in the back of the storage shelf so the temperatures were extreme. (I know not ideal) When I found them and took them out...the juice had decreased by at least an inch or more...do you think they are safe? What would you say happened to it?
I just wish you had a curtain to draw over those beautiful, precious bottled fruits to prevent them from fading and losing their nutrients in the light!

Instead of the time you wasted on advertising the magnet you obviously didn't need by how much you handled the obviously not hot lid. You could've actually showed how to water bath can like it said you would.

That's not really an apple cider, isn't it? Apple cider is an alcoholic drink so I'm guessing it's an apple juice that's being used here.
