    I discovered by accident an easy way to pit cherries...freeze then first! Once defrosted they are soft and the pits pop out in a squeeze, then you can go ahead and make your jams and pickles :)

    One suggestion:
    If you are going to make pie (which is a common use for my canned cherries) use the liquid from the canning jars as the liquid for your pie crust. It adds a lot of flavor (and color) to the crust. With the cider this should be especially good.

    Just started (Feb 2022) watching your channel and your website! absolutely love it! While I'm in an urban jungle, preparing my kitchen for some Country Living, my in-laws live on a high altitude farm so I pass along the great recipes and tips on live stock and gardening (they speak another language). I have the Country Living encyclopedia, so actually seeing many of the things from the book in your videos is wonderfully educational. God Bless you and keep you strong and healthy!

    Carolyn, I adore you. I feel like there's just a small amount of satisfaction missing when I watch your videos and I just realized that it's that I want to see the end result. Maybe that's strange, but I feel like I'd love your awesome videos even more if you just showed us what things look like when they are finished. Does the pressure canning change the beautiful red of these cherries? Please show the results, if it's not too much. Thank you!!!!

      Ann Merrick just giving feedback on something that would make her channel even better. I'm not going to unsubscribe or stop watching if she doesn't. And it wouldn't take that much more to just show one shot of the end product. Let her determine if it's too much for her. Unless you're speaking on her behalf. Then I'm sorry for my suggestion.

    Thank you for a wonderful video! What a great idea adding the almond extract. I never would of thought about using the apple cider....cherry cider plus a bowl of cherries in the middle of winter ....yes!

    Thanks for taking your time on videoing canning cherries. It's very informative and doesn't look hard to try out. Hope you show more videos on possibly making cherry pie filling and the process of canning them.

      +María Santiago Thank you Maria! Unfortunately that one will have to wait for next year as I am now officially done with cherries for the year (and I only preserve what comes off the trees here or for free from neighbors).

    2 things- my mom was the canner of the family and I remember she used to put the jars in a lasagna casserole dish w/ warm water in the bottom to stop shocking the glass (like the one in your video). And me if I don't have cider I buy frozen apple juice concentrate the darker colored juice one and simmer that w/out adding water to it.

    I wish cherries shipped well!!! I need to get a TX variety that I can grow! When I lived in CA I used to pick and can my own and I sure miss that part of CA although I'm glad to be back home in TX!

    What is the variety of your cherries? Is it hardy to zone 4? I would like to grow sweet cherries, but I'm having trouble finding a variety that is hardy in SD.

    I am so going to make this! I did cherries with almond, but never apple cider. BTW, how do you can just apple cider? How many minutes in a water bath? My elevation is 1, 378.

      +My New England Kitchen - If it is canned in a water bath it wont ferment... which is why canning works for anything, it kills the yeasts and bacteria responsible for the spoilage (or fermentation). I water bath can in 1/2 gallon size (only safe for clear juices) for the recommended time.

    Does your apple cider have any additives? Our stores carry semi-local cider but it always has 1 or 2 preservatives added to it. I wasn't sure if it would be ok with those preservatives to use it to can.

    I wonder if I could use apple juice from the store. Then can my tart cherries. Thinking the tartness would offset the sweetness of the juice

    They look beautiful but wouldn't they been easier pitted than regular? Great job for the kids.

      +Katie Grazier You can certainly pit them - but we use as snacks for the kids - so they will pit them when they consume them! We do pit all of the cherries for jam or cherry pie filling - but after doing about 50 quarts of those, this is a welcome change. If I were going to use these to cook with, I would certainly want them pitted before canning!

    Would pressure canning make this last longer? Are there foods that don't need pressure canned and can last just as long doing it this way?

    New subscriber here and I enjoy your videos!
    Thank you for making this video on raw fruit canning. I would love a cherry tree but I think it's too hot to grow them in South Louisiana. We do however, have a Fuyu Imoto persimmon tree and I am seriously thinking of trying this with some peeled and roughly-chopped persimmons next season! I'm trying to imagine persimmon-infused apple cider. ☺
    Thanks also for the lesson on water-bathing. My latest thing is pickled eggs and I water-bathed some jars in a white vinegar brine solution with spices.
    Do you think the pickled eggs which sealed are shelf stable and would not need refrigeration?

    I order jar flats on line ,boxes of 200.
    I was happy.
    But ! I've notice that some of then about 3 or 4 out of 7 when process. On 10 lb for 90 min ,since it's meat .the flat bow up as if going to blow up. Why?

    I've heard that cherry trees that are not sprayed bear cherries with worms in them. I'm assuming the canning process will kill the worms, but is it still okay to eat those? I've never scanned cherries for this reason, but I'd like to try it. Just looking for reassurance. I've also heard that spraying the trees with kaolin clay will deter worms. Have you tried this?

      +Tdew DN Hi there! Restaurant supply stores usually carry them (both online and in person). Amazon has them too... but they are much more expensive. They are the 30qt. Stainless Steel Bowls.

      My husband found me one It is so big and I am so happy with all the things I can make and prepare!!!! I am so in Love with canning. Black Cherries came in at the grocery and then went on sale for 1.77 a pound. My daughter and I bought 25 pounds and set at the table and pitted them then we canned them in organic apple juice. They are wonderful!!!!! We ended up with 28 pints.

    Speaking of cherries, the last several years I have lost my cherry crop to birds. Other than betting, do you have a good way to ward off the birds? My tree is 25 feet tall, netting is just not practical.
    Do you think I should shorten the tree? It's a bing cherry tree.

    Where you say "apple cider" do you mean "apple juice"? Or is it the really cider thus containing alcohol (then served to kids?)?

      This would be what is known in North America as a soft cider. Soft ciders are more processed than a juice but not fermented so there is no alcohol formed

    I made a recipe I found on the internet of baked oatmeal! Real slop! I am throwing it out. It is not Apple Betty that is for sure. Oatmeal cooked in water with a little bit of sugar, butter and salt is great. Can't be improved upon.

    I canned some cherries last year. I had left a jar in our camping trailer in the back of the storage shelf so the temperatures were extreme. (I know not ideal) When I found them and took them out...the juice had decreased by at least an inch or more...do you think they are safe? What would you say happened to it?

    The video said it was going to show how to water bath can. But you only showed how to put the stuff in a jar which is pretty obvious. You never actually showed how to water bath can. Instead of the time you wasted on advertising the magnet you obviously didn't need by how much you handled the obviously not hot lid. You could've actually showed how to water bath can like it said you would.

    That's not really an apple cider, isn't it? Apple cider is an alcoholic drink so I'm guessing it's an apple juice that's being used here.
