Just some rye, butter, tomatoes, salt and pepper and thinly sliced onions. A big plate and share it with my mother and me. He wasn't good with feelings and very strict, which made these evenings so special.

I would also recommend "pá amb tomaquet" (pan con tomate, bread with tomato): toasted bread with rubbed garlic, rubbed tomato, salt, and EVOO. A staple breakfast in many locations in Spain and great with other ingredients as a base layer.
Over 30 years ago, I used to drizzle olive oil on my bread, toss it under the broiler till my slice was all nice and toasted, then I would cover it with diced tomatoes, salt and pepper. Pro trick: if you want good tomatoes in the wintertime, cherry tomatoes are delicious year round! Menopause and olive oil don’t mix, so I’ve stopped eating my toast this way. Let me share my vegan "caprese" Sandwich: 1. Some kind of bread you like for the sandwich 2. Sliced tomatoes 3. Tofu instead of Mozarella (sounds weird and i didn't think it was going to work, but it completely worked with this flavour combination) 4. Smear coarse dijon mustard on the bottom-side of the bread, add balsamic vinegar to the top half of the bread, add olive oil and dried oregano to both. 5. Assemble: Bread, a layer of tomato slices, a layer of tofu, always add oregano, salt and olive oil onto the tofu and then do as many layers as you want. It's not traditional, but for some reason the tofu works really well with those ingredients and i'm not a huge tofu lover. I don't like tofu by itself. It's close enough to the version with mozarella to be really satisfying.
I just had some refreshed ciabatta with sweet pepper sauce, topped with some cherry tomatoes , onion salt, black pepper and balsamic vinegar glaze, just to finish off some stuff that needed using up. We’ve been eating dakos all summer long at home,as my son went to Crete and fell in love with the dish. We’ve gotten a bumper crop of tomatoes from our garden this year, and this has a great way to enjoy them at peak ripeness. Dakos is one of those perfect foods that is so simple but so delicious at the same time. Just use dark, rustic bread (rusks are traditionally used but too hard to source for me), add a layer of crumbled feta, good olive oil, grated tomatoes, oregano, and maybe olives or capers if you like. It is that simple, but if you love tomatoes, it is perfect. I mix a bit of ricotta in with the feta just to recreate the creamy texture and taste of Greek cheeses hard to find in my local stores. It’s so addictive.
I have been eating tomato mayo toast with a little pepper since I was a kid. My dad, who grew up on a farm and had his own garden would make them for us. Soooo good!
One: tomato + mayo toast used to be my absolute fave too! Such a perfect taste and texture combo for me, ust perfection. Two: avo toast is definitely a tasty and quick option but I do agree we really went a little too far with them and forgot so many other incredible options exist! I love the "ricotta" & tomato toast because it is also much more balanced so aside from incredible taste, will keep you full for longer!
I’ve been enjoying toasted tomato sandwiches for over 60 years, the last 12 with a veganized version . For me this is the single reason to grow tomatoes!

I started doing a lacto fermentation tomatoes with my garden cherry tomatoes this year, they are so good on sandwiches. It’s easy and has health benefits. I've eaten fried tomatoes on toast with just a little salt my whole life, and I love it just as is. No embellishment needed. (Yours look good, I just love it plain.) Great with eggs at breakfast, too.
Brads version makes a lot of sense to me. Tomatoes and tofu go really well together for some reason. Maybe because of the acidity, maybe becaue of the umami flavour of the tomatoes or maybe because of both.

The sugar on the tomatoes did not surprise me. My grandfather would eat sliced tomatoes with sugar sprinkled on them for dessert. They were homegrown, very ripe, and delicious that way.

I do this all the time. We lost our farmer's market and there was a guy who would let me buy the box of tomatoes left over at the end of the day. Most needed to be used immediately so I took a bunch a roasted them as per the "Raw Vegan, Not Gross" soup recipe and made most into soup, and the others, roasted with the tomato soup group and used them on toast YUM! I miss our apple guy (he had the tomatoes and in the beginning peaches before a drought really decimated his trees). Tomatoes and peanut butter or seed butter has to be better than the peanut butter and pickle sandwiches my mom made us eat.
Years ago I found a recipe in a local newspaper for thick sliced tomatoes on whole-wheat toast with, believe it or not, unsalted peanut butter. It works really well that you can season it as savory as you like.
So with peanut butter, I've tried tomato jam, fig jam, and butternut squash jam. Would a slide of butternut squash baked in the oven and with that sugar trick be nice? Hmmm something to try.

I was thinking the tomato and peanut butter thing was WILD until you brought up PB&J... it really isn't THAT different from strawberry or grape on peanut butter. Those would probably sound equally as shocking to someone from a place where PB&J isn't normal.
So we are just having crostini for breakfast. Not mad at it though. Don’t burn the bread over the fire. That is stupid. You can burn your hand or that oil can catch fire. Just grill it in the hot pan you had the tomatoes in.

I went to Italy and every sandwich I got at a lil deli had tomato and usually mozzarella and this became one of my new favorite things

I put guacamole, sun dried tomatoes and a poached egg topped with complete seasoning and sambal olek on my Killer Dave's Sprouted toast.
