We just had rotisserie chicken tonight. We had it with broccoli and rice. I prefer to do fried rice. Take some of the white meat from the chicken and dice it. Put it aside. Using a single skillet, scramble an egg and cut it into small pieces, and put it aside. Add diced carrots, some frozen kernel corn, diced green onion, a little olive oil and stir fry in the same skillet. Add the precooked rice, chicken and egg to the skillet. Flavor to taste with a good quality soy sauce. Stir till the rice is golden brown. Serve part of the fried rice, and bag the rest in zip-lock bags. It keeps well in the fridge and is tastier then just plain white rice. Re-heat in the microwave.
I too use every bit of the chicken carcass. Boil the bones in water and save the broth for chicken soup in your instant pot. Just add carrots, potatoes or rice, celery, onions to your broth and presto... another couple of meals! Safe travels Scott.
Genius! Every part of that meal was a wow moment for me. Processing the chicken, prepped rice, frozen veggies, tomatoes in THE CABINET, and the cheese topping. What a great, quick, tasty, nutritious meal!
I love rotisserie chicken! And I love the wings, they're the first thing I eat off the chicken. That's usually my lunch with a salad then I do like you and put it the remaining meat in a baggy. The only difference is I make soup or broth from the bones. I love Brussel sprouts and Cauliflower especially roasted. Safe travels and stay healthy!

One day I will get an RV and travel the US, Canada, South America and Alaska. After the covid19 virus goes away...maybe a long time. It needs green snap peas for color. They double as good snacks just by themselves. Another alternative would be to make a casserole with some yogurt or mayo to hold it together. I also make chicken salad and chicken tacos. Thanks!
I’m still learning how to stock all my food. This is a great chicken tip since i love those Sams Club rotisserie birds any way. I do use the microwave steamer vegetables, but the 59k freezer is a bit smaller.
My wife likes the white meat on a salad. I like the dark meat on rice that has a little butter and sesame oil added. Great tips for doing it on the move. Thanks!

You can buy ones that stand up. This will give you life changing liquid for cooking your rice, making soup and other things! I am a chef, but I cannot pass up a rotisserie chicken in Costco! We usually get 3 meals from one, plus the stock!

And I want to go to the Keys this winter.
Arrggg. The wings are the best part! We gnaw everything off the bones. That’s where the tasty stuff is. But we only have it maybe once a year because it’s so salty. Have you found a good place? Our Safeway’s is inferior.(IMHO) haven’t figured out how to do decent rice in my instant pot yet. It’s either undercooked or it’s mush. So far camping I’m sticking with instant rice. (But we are campers, not full timers. I think that’s a big difference. I would eat differently if I weren’t just going out for a week or two at a time.) Cauliflower I would definitely have to put a lot of cheese on. Doesn’t seem to have much taste to me. And my husband likes brussels sprouts, so I make them for him - actually tomorrow will be having some. I do those either boiled with some celery leaves, which seems to kill the bad taste. And then tossed with lots of butter and Parmesan to hide the rest of the bad taste. Or I cut them in small pieces and stir fry them in olive oil with some chopped up shallots and toss in some raisins, a splash of water, and a splash of balsamic glaze and let it steam for a bit after the edges have gotten crispy. I have to do something to get broccoli down, also. But I’m partial to the zucchini.
You asked, I'll answer. Actually I love rotisserie chicken cold with hot veggies. Not a fan of cauliflower but baked beans or green beans and a hot potato works for me. Sometimes just an open faced rotisserie chicken on toast w/gravy hits the spot also. Rotisserie chicken can be done a million ways, store purchased or cooked by yourself, a versatile meal.
When I watch your videos I am always drawn to how you have organized your rig. I try to get a quick glance at the counter top or the inside of the cabinets. It seems as though you have done a great job of fitting a tremendous amount of “stuff” in a small area. Maybe a video walking us through some of the ideas you have come up with; show us how you utilize the limited storage space, etc... I just purchased a 59KL NPF, downsized from a 35ft rig, and I’m struggling to organize. Thanks for the content you are producing. Mark
CONGRATS Mark, on your KL NPFe. It is a puzzle and prioritization process to get everything that needs to be in the van. One thought to perhaps help is to move/buy things as needed into the van. Shopping sprees into #vanlife usually cost one $$
The last thing I made with rotisserie chicken was chicken tortilla soup. Just the right amount of heat (spice) and lots of fun crispy tortilla strips. Num Num! The most memorable meal was completely unexpected and amazingly tasty. One of my co-workers brought a rotisserie chicken to work and was making sandwiches w/it and shared some with me. The unexpected flavor point was the thin slice of jellied cranberry sauce on the sandwich. Try it. It will surprise you. For the left over sauce, you can slice/cube it and store it in those handy dandy ziploc bags. Easy way to add flavor to a meal or mix it into a favorite beverage. Broccoli over cauliflower for me. I just like the color better, but if you are looking for the nutritional comparison, broccoli has higher Vitamin content, specifically K, C and A with more minerals and fiber. Cauliflower has in one cup 3 less calories and .5 grams less carbs.

Get some coconut aminos for the rice, a substitute for soy sauce. I would stir fry the chicken with the rice and some mushrooms, lots of butter and aminos, throw in some peppers if you have them. Look into getting a Hot Logic personal oven I found out about it from an RV FB group, you can cook while you drive. I use one at work, plug it in when I get there and lunch is all hot and toasty by noon. Coolest thing!
Hi Scott, since you mentioned Costco did you know that you can buy rotisserie chicken already deboned in a vacuum seal pack. You can usually find it right next to the hot display in the refrigerated area . Same chicken just not hot.
Agreed, but it is not the same. Look at the ingredients. Prefer to pull meat from bones meyself. And the pre-package amounts is too much for a single person to consume, in my experience. Great observation !.

We also buy the whole chickens and make 2-3 meals from it. Just wondering if those paper plates are microwavable especially with a print? Seems I heard somewhere not to use paper towels with print as it was bad for your health.🐓

Rotisserie chicken is great when traveling. No cauliflower for me! Love mashed potatoes or rice (brown or white), and corn, peas, green beans, broccoli, or a salad. Mac or potato salad is also good with the chicken. Also makes great chicken salad sandwiches with grapes or dried cranberries, almonds or pecans, mayo, a touch of sweet pickle relish, on a small salad or with crackers. Hope all is well.
Scott...I am so disappointed! You drink so many high grade whiskeys, bourbons...etc. and then you pull out the box wine! That is Sacrilege...lol! You have to step up your wine game! I suggested some wineries to go to here in Arizona (Page Springs, Merkin) on your website,, when you come this way again. I also spent many years living in Sonoma and Napa Valley so I can point you to some great wineries up there, especially Russian River area...But please no more box wine! LOL...Happy trails!

We enjoy making chicken soup from rotisserie, makes it soooo easy! I use every piece of the carcass in making instant pot bone broth squeezing every bit of nutrients out of it. We pick up our boy “Mack” (Lily’s BF) on 2 July... will come to next FL meet up! You & Kyle with Lily of course must let us know if you get to the Panhandle, we have a spot for you! LOL... he would like it, but don’t feed him people food very often and one it tiny amounts. Was doing the opposite which caused medical issues I think.
Unlike traveling with a cat, our dog is spoiled and NEEDS some chicken to entice her normal feeding of raw food.

Rotisserie chicken is great when traveling. No cauliflower for me! Love mashed potatoes or rice (brown or white), and corn, peas, green beans, broccoli, or a salad. Mac or potato salad is also good with the chicken. Also makes great chicken salad sandwiches with grapes or dried cranberries, almonds or pecans, mayo, a touch of sweet pickle relish, on a small salad or with crackers. Hope all is well.

Scott...I am so disappointed! You drink so many high grade whiskeys, bourbons...etc. and then you pull out the box wine! That is Sacrilege...lol! You have to step up your wine game! I suggested some wineries to go to here in Arizona (Page Springs, Merkin) on your website,, when you come this way again. I also spent many years living in Sonoma and Napa Valley so I can point you to some great wineries up there, especially Russian River area...But please no more box wine! LOL...Happy trails!
Michel, you have a point. The BOX Wine ddes tave A secondary porpose. And that is to reduce tte Cat frou stepping on HomePod control and changing setting.
