    Goes against everything I was taught about handling pastry with the lightest of touch with the coldest fingers you can muster and use the minimum rolling out flour that you can. My cold handed friend was the best pastry maker I ever knew but it cost her to learn at Cordon Bleu in France. Sadly she's making pastry in a higher place now, I miss you Susan, and your wonderful pastry.

    Tried the plastic wrap and couldn't really get the hang of it. Why does it take 2 people to make one tart?

    My mother would have had the dough rolled out and in the pan for all the messing around with the plastic wrap.
