One of the contestants decided 'I'm going to decorate my cupcakes with little fondant takeout boxes and fortune cookies'. The judges pointing out to her that neither of those things are actually Chinese was very satisfying.
I like Yuya's reaction videos because he doesn't just sit there and react, he also gives advice and has opinions on a lot of things, he's also curious and asks us questions too. It makes his videos more entertaining and informative :))

It is ok to put other country's ingredients into Japanese BUN then sell at Japan. But when you make some "Japan Food" in other country by using non-Japan ingredient. That's a big mistake.
That's dumb. When you want to have a Japanese week in a "culinary" show you are supposed to "exhibit" their cooking styles and their ingredients! Doing these stunts just questions the authenticity of the show and that's what Nigel and yuya are doing.
Well, creative liberty is all good, but there has to be an underline theme that relates to the topic. This is supposed to be a episode about Japanese bakery. How does any of these food even shows anything Japanese? You simply can't just say that because McDonalds McChicken is sold in Japan, therefore I can get away with making a crispy chicken sandwich and call it Japanese-inspired food.
Red bean paste is quickly becoming one of my favorite treats in the world. It's a shame not a single one of these british bakers even thought to use it.

@@notsam_rohan Yup! It’s very common among Dehli walay. It’s usually made with cari (unripe mango), sugar (I think?), kalonji... there’s other ingredients as well, but I’ve never learnt how to make it, I’ve only ever watched my grandmother do it 🙈 It’s a pretty normal condiment with haleem and such
As a Scottish woman I have been hiding behind my hands with this video because when I watched this when it aired I was like... is this not more Chinese food? @@anthonydeadman well we are reknowned for salmon and venison. There’s the stereotypical haggis, neeps (turnip) and tatties (potatoes) and porridge. Cranachan is a dessert of raspberries with oats, cream, whiskey and honey (usually Heather). Cullen skink is effectively a fish soup. We also have Scottish macaroon which I won’t tell you how it’s made 👀 but it’s amazing. Especially Irn Bru flavour 😁 Oh, and we all takeaway fish and chips a fish supper 😋 you’ll get deep fried pizza in a chip shop, black pudding in batter that sort of thing.

There is also the Italian version of this show that is called "Bake off Italia - Dolci in forno" (the litteral translation is "Bake off Italy - sweets in the oven"). There were also a Japanese test episode but they did mochi. Also as a guest judge there were a proper Japanese chef (that worked for a 3 stars Michelin restaurant). So, by watching the english version I think the Italian one is better.

Surely pork cutlet, especially with Japanese curry, is very popular but various ingredients can be used and called katsu, such as beef and chicken. Also, ground beef メンチカツ、skewered 串カツ are common as well.
The Japanese element was supposed to be the steamed buns, that's on the show creators if it isn't. The contestants are told they can use any filling, typically people will not use traditional fillings as it is seen as a safe option and the judges like them to show they are good with new/different flavour combinations. This was also only 1 of 3 items they had to bake on the show, the other things they baked on this episode was a 'Matcha crepe cake' and what they called a 'Kawaii cake'.

I live in Japan since 2003. I only met one person who has oven for baking and they had oven because they made cakes to sell. The closest thing to an oven (that everywhere I've seen so far) is a small "drawer" underneath the gas hobs that is very shallow and used mostly for baking fish. Or they have a combo microwave/baking oven, but that is usually only big enough to barely fit a pie, a square pan or cupcakes tin will technically fit, but you can't use them because the heating element is in one place and the pan needs to rotate to get even cooking so you need to use round pan. Having a Japanese week on a baking show doesn't even make sense.
10:16 "steamed chips" How is that steamed chips? Steamed chips are supposed to cook in steam, not drown and cook in oil. Call them "deep fried chips", "mate".
My Mom and I watched this British Back Off in particular in real time when it aired. I was SO EXCITED! and we did exactly what Uncle Roger did. I cried, Mom was confused, and then I got mad. IT WAS AWFUL.

Hilarious manga about a former yakuza trying to do right by his office lady wife by being a good house husband but he's pretty mired in his old mannerisms. @arkiaquarius8 My favorite is still the one bit at the beginning when that door to door cutlery salesman comes knocking while Tatsu is working in the kitchen and he answers the door with an apron splattered in red and a knife in hand. Poor salesman probably needed some new boxers after that sale.

Here in Malaysia we have something like steam bun, we call it "pau". Pau have filling such as chicken curry, beef curry, red beans, chocolate and kaya. Hee.. Just sharing ✌

Whenever I visit Japan, I love the convenience store so much, I make sure to visit all the convenience stores I could find. I had never bought any bun since I always look at the salad and onigiri section lol but the food in convenience stores are so good...Even the bread is unique and nice.
When I use to study in Tokyo I use to always grab a pizza bun from the Family Mart on my way home. They are so delicious! Wish they were just as popular in Australia 😢

Oh my god CoCo’s!!! When I was stationed on Okinawa the guys there took me to CoCo’s on the third night and I instantly fell in love. Double cutlet curry level 6 with 800 grams of rice. It was dinner and the leftover rice was lunch the next day.

OK, here's the explanation I think. I *am* somewhat disappointed not to see more Japanese influences here. But that said, these rounds tend to be more about using some core idea (in this instance, a cute steamed bun) and then being creative with it. In fact, I think if somebody just made the traditional version of what they'd asked for they'd probably be marked down for it.
Uncle Roger is a trip I just discovered today and love your take on things and him as well. I enjoy Japanese cooking, but that can be quite an adventure finding the ingredients.

_Mukashi mukashi_ when I was still convinced I had the discipline to learn to speak Japanese (or any language), my class finished the semester by going to a Japanese restaurant called Katsu's. We put in all the food as a single order ahead of time (we went on a Tuesday when the restaurant was normally closed, but Katsu-san opened just for us), and at the end of the night when it was time to pay, there was a discrepancy and the bill showed items that weren't ordered (I think, I wasn't directly involved), and the waitress got into an argument about it with sensei, and Katsu-san had to come out to mediate it. It was resolved somehow, but later sensei mentioned that in Japan, if you saw an error on your bill like that and you said there was an error, that the restaurant would just remove the items from the bill without a question, and if the waitress had been Japanese then she wouldn't have argued with him. I just assumed that this was the case because sensei said that it was, but I didn't really believe it was true then, and I still don't really believe that. Is that true that you just have to say that something on the bill was an error and they'll remove it? (You mentioned that the culture of the customer always being right is too strong in Japan, and that's why I thought of this)

Coriander or cilantro is used in Sri Lankan cooking also but I personally find it foul tasting and the smell makes me dry heave...I have read it may be due to genetic reasons that some people find the smell offensive
I do like coriander in a fresh spicy salad, it adds a pleasantly grassy dimension to it that's very interesting and balances out well with the spicy part. (I'm French but I have a palate that has a bit of experience with Thai food)
I love the fact you compare Japanese culture and food to what you’re watching. The nuance you have really helps understand how close or far away someone gets with their recipe. I did have a question though as I’m studying Japanese and would love some clarification. You mentioned Red Bean Mochi is referred to as daifuku and not really mochi in Japan. What makes it not a mochi? What would actually make something mochi?

The term Asia is a troubling term to begin with. It's a very euro centric term . Originally the term just means the rest of the world to the east side of Greek. So Asia is just a term to lump the whole pan arab and to the rest to far eastern side of the globe into one without paying respect to the various differences in political situation, ethnicities, cultural beliefs in the whole region. But the term remains as a geographical term. And as a cultural term, the term can mean a very different thing depending who you're talking to. For Americans, Asian mostly means someone with ethnicity from Northeast and Southeast Asia. In UK, when you say Asian, Indian would be on top of their mind. So yeah, it's fair that Arab is not on top of anyone's mind. Even to most northeast asians they wouldn't think they want to be lumped into one with middle eastern. The cultural differences are too big. In a classic chinese literature "Journey To The West", west means India, not even Europe. For Northeasterners, India is already considered "west". India and Pan Arab is "East" only to Europeans. So today the term Westerners is not even a geographical term. Just a cultural term. If we all want to strictly use it as a geographical term, Australia is geographically in the east side of the globe so it should not be lumped as a western country. Thus, when anyone mention "asian", better make sure if they're speaking geographically or in a cultural context.

But some idiot used the word to describe people with Down's Syndrome in the past and now the word has a negative connotation. Not good for the actual Mongolians, but instead of banning the word like the N word in US, many Mongolians are reclaiming the word with pride today. Oriental has also become an offensive word. So I don't know, perhaps we're running out of term to use for now. Personally, I don't know what to suggest either. As language will continue to evolve, I'm sure there'll be a new term. I think in US many Indians and middle easterners also try to reclaim the term Asian for them. And perhaps as the world continues to be globalized, there will be no need for the term too in the future. Who knows. 😀

Do they have Kaya bun in Japan? Buns or Pau in Malaysia usually be Kaya, Red Bean(Most people favourite), Coconut, Chicken, Beef and chocolate. Kaya if you don't know is a jam consist of Coconut milk, eggs and sugar. Another version is adding Pandan too. I would say the taste is sweet and suitable for dessert.
I think what Uncle Roger was criticizing here is the fact that the show said Japanese Week. Meaning creating Japanese Pastries involving Japanese Ingredients. Seeing Pizza Buns in Japan, it can be considered fusion, combining Japanese Steam Buns and Italian Pizza. However in a cooking show/competition that specifically states Japanese Week with Japanese Steam Buns as the dish, you have to make it that not only is it the Dish but it also is a Dish made using the Ingredients of the theme and making it pop out or elevate those ingredients that highlights the theme first and for most. PS Wait, people thought you are like a Yakuza with your haircut? Personally do not see it. All I can see is it looks good on you and the benefits of the haircut for someone who works at a Food Industry/Business.

@@anthonydeadman well we are reknowned for salmon and venison. There’s the stereotypical haggis, neeps (turnip) and tatties (potatoes) and porridge. Cranachan is a dessert of raspberries with oats, cream, whiskey and honey (usually Heather). Cullen skink is effectively a fish soup. We also have Scottish macaroon which I won’t tell you how it’s made 👀 but it’s amazing.
Especially Irn Bru flavour 😁
Oh, and we all takeaway fish and chips a fish supper 😋 you’ll get deep fried pizza in a chip shop, black pudding in batter that sort of thing.

There is also the Italian version of this show that is called "Bake off Italia - Dolci in forno" (the litteral translation is "Bake off Italy - sweets in the oven"). There were also a Japanese test episode but they did mochi. Also as a guest judge there were a proper Japanese chef (that worked for a 3 stars Michelin restaurant). So, by watching the english version I think the Italian one is better.
Now I need to watch the Italian episode to heal my soul - and work on my spoken Italian understanding, because I'm rusty lol

“Katsu カツ” is the shorten form of “katsuretsu カツレツ” (Japanese breaded cutlet); so it doesn’t have to be pork.
Surely pork cutlet, especially with Japanese curry, is very popular but various ingredients can be used and called katsu, such as beef and chicken.
Also, ground beef メンチカツ、skewered 串カツ are common as well.
The Japanese element was supposed to be the steamed buns, that's on the show creators if it isn't. The contestants are told they can use any filling, typically people will not use traditional fillings as it is seen as a safe option and the judges like them to show they are good with new/different flavour combinations.
This was also only 1 of 3 items they had to bake on the show, the other things they baked on this episode was a 'Matcha crepe cake' and what they called a 'Kawaii cake'.

I live in Japan since 2003. I only met one person who has oven for baking and they had oven because they made cakes to sell. The closest thing to an oven (that everywhere I've seen so far) is a small "drawer" underneath the gas hobs that is very shallow and used mostly for baking fish. Or they have a combo microwave/baking oven, but that is usually only big enough to barely fit a pie, a square pan or cupcakes tin will technically fit, but you can't use them because the heating element is in one place and the pan needs to rotate to get even cooking so you need to use round pan. Having a Japanese week on a baking show doesn't even make sense.

Hilarious manga about a former yakuza trying to do right by his office lady wife by being a good house husband but he's pretty mired in his old mannerisms. The juxtaposition of hardcore japanese ganster appearance and speech with utterly mundane household tasks just works.
@arkiaquarius8 My favorite is still the one bit at the beginning when that door to door cutlery salesman comes knocking while Tatsu is working in the kitchen and he answers the door with an apron splattered in red and a knife in hand. Poor salesman probably needed some new boxers after that sale.

I had never bought any bun since I always look at the salad and onigiri section lol but the food in convenience stores are so good...Even the bread is unique and nice.

Oh my god CoCo’s!!! When I was stationed on Okinawa the guys there took me to CoCo’s on the third night and I instantly fell in love. Double cutlet curry level 6 with 800 grams of rice. It was dinner and the leftover rice was lunch the next day.

OK, here's the explanation I think. I *am* somewhat disappointed not to see more Japanese influences here. But that said, these rounds tend to be more about using some core idea (in this instance, a cute steamed bun) and then being creative with it. In fact, I think if somebody just made the traditional version of what they'd asked for they'd probably be marked down for it.
Uncle Roger is a trip I just discovered today and love your take on things and him as well. I enjoy Japanese cooking, but that can be quite an adventure finding the ingredients.
My wife watches Great British Bake-off and I remember this episode leaving me both confused, and slightly offended on behalf of Japan.
Just found your vids randomly and gotta say really great stuff, i love to cook, especially japanese and korean food (grandma is korean) and getting this info is gonna be a great help to whatever i make in the future.
_Mukashi mukashi_ when I was still convinced I had the discipline to learn to speak Japanese (or any language), my class finished the semester by going to a Japanese restaurant called Katsu's. We put in all the food as a single order ahead of time (we went on a Tuesday when the restaurant was normally closed, but Katsu-san opened just for us), and at the end of the night when it was time to pay, there was a discrepancy and the bill showed items that weren't ordered (I think, I wasn't directly involved), and the waitress got into an argument about it with sensei, and Katsu-san had to come out to mediate it. It was resolved somehow, but later sensei mentioned that in Japan, if you saw an error on your bill like that and you said there was an error, that the restaurant would just remove the items from the bill without a question, and if the waitress had been Japanese then she wouldn't have argued with him. I just assumed that this was the case because sensei said that it was, but I didn't really believe it was true then, and I still don't really believe that.
Is that true that you just have to say that something on the bill was an error and they'll remove it? (You mentioned that the culture of the customer always being right is too strong in Japan, and that's why I thought of this)

When you refer to coriander, are you talking about an herb or a seed?
Coriander or cilantro is used in Sri Lankan cooking also but I personally find it foul tasting and the smell makes me dry heave...I have read it may be due to genetic reasons that some people find the smell offensive
I do like coriander in a fresh spicy salad, it adds a pleasantly grassy dimension to it that's very interesting and balances out well with the spicy part. (I'm French but I have a palate that has a bit of experience with Thai food)
I love the fact you compare Japanese culture and food to what you’re watching. The nuance you have really helps understand how close or far away someone gets with their recipe.
I did have a question though as I’m studying Japanese and would love some clarification. You mentioned Red Bean Mochi is referred to as daifuku and not really mochi in Japan. What makes it not a mochi? What would actually make something mochi?

The term Asia is a troubling term to begin with. It's a very euro centric term . Originally the term just means the rest of the world to the east side of Greek. So Asia is just a term to lump the whole pan arab and to the rest to far eastern side of the globe into one without paying respect to the various differences in political situation, ethnicities, cultural beliefs in the whole region.
But the term remains as a geographical term. And as a cultural term, the term can mean a very different thing depending who you're talking to. For Americans, Asian mostly means someone with ethnicity from Northeast and Southeast Asia. In UK, when you say Asian, Indian would be on top of their mind. So yeah, it's fair that Arab is not on top of anyone's mind. Even to most northeast asians they wouldn't think they want to be lumped into one with middle eastern. The cultural differences are too big. In a classic chinese literature "Journey To The West", west means India, not even Europe. For Northeasterners, India is already considered "west". India and Pan Arab is "East" only to Europeans.
So today the term Westerners is not even a geographical term. Just a cultural term. If we all want to strictly use it as a geographical term, Australia is geographically in the east side of the globe so it should not be lumped as a western country.
Thus, when anyone mention "asian", better make sure if they're speaking geographically or in a cultural context.

But some idiot used the word to describe people with Down's Syndrome in the past and now the word has a negative connotation. Not good for the actual Mongolians, but instead of banning the word like the N word in US, many Mongolians are reclaiming the word with pride today. Oriental has also become an offensive word. So I don't know, perhaps we're running out of term to use for now. Personally, I don't know what to suggest either. As language will continue to evolve, I'm sure there'll be a new term.
I think in US many Indians and middle easterners also try to reclaim the term Asian for them. And perhaps as the world continues to be globalized, there will be no need for the term too in the future. Who knows. 😀

Do they have Kaya bun in Japan? Buns or Pau in Malaysia usually be Kaya, Red Bean(Most people favourite), Coconut, Chicken, Beef and chocolate. Kaya if you don't know is a jam consist of Coconut milk, eggs and sugar. Another version is adding Pandan too. I would say the taste is sweet and suitable for dessert.
Personally I prefer kaya bun over red bean bun.

I think what Uncle Roger was criticizing here is the fact that the show said Japanese Week. Meaning creating Japanese Pastries involving Japanese Ingredients. Seeing Pizza Buns in Japan, it can be considered fusion, combining Japanese Steam Buns and Italian Pizza. However in a cooking show/competition that specifically states Japanese Week with Japanese Steam Buns as the dish, you have to make it that not only is it the Dish but it also is a Dish made using the Ingredients of the theme and making it pop out or elevate those ingredients that highlights the theme first and for most.
PS Wait, people thought you are like a Yakuza with your haircut? Personally do not see it. All I can see is it looks good on you and the benefits of the haircut for someone who works at a Food Industry/Business.
