just thought I would throw this tip your way - chocolate is attracted to chocolate.. when you are tapping to get rid of access have it still touch the chocolate and it will be easier and you will have less excess chocolate on the product. Also, be careful of storing untempered chocolate in the fridge - it creates a sweaty streaky product as the sugar is being dissolved in the fridge. I suggest candy melts or almond bark (coating chocolate for non americans) as it is a chocolate product that does not need tempering.
