What they do not tell you is if you cut your cake like this (from the center) and put both ends together to keep it from drying out, the cake will melt and fall apart at room temperature. It is better to cut it in triangle shape if you plan on leaving it out.

You had cut more slices off camera or unless it's magic because I counted 4x and the number of slices on the parchment don't add up to what was cut. Lol

You can take the cake out of the fridge and let it sit at room temperature for about 60-90 minutes before it’ll start to sink

Tall cakes make no sense to me. They are pretty but they take more time to cut and serve. I guess it’s a matter of taste.
