I Made this salad with three types of tomates, red, yellow, and indigo cherry. It ramped up the visual appeal and NOTHING beats the flavor of fresh tomates out of the garden. The dressing made this a total success!

I make my tomato salad almost identical, however, I like to add left-over steak cut to bite size pieces to the mix. Let it sit for a bit to let dressing really develop and impregnate the meat. My family absolutely loves this very light summer salad with crusty baguette and a bottle of red wine.

That looks so good. A family friend used to make basically the same thing but also used cucumbers, Kalamata olives, avocado, and feta cheese in hers. But she didn't use the mustard in the dressing. I have learned that makes the dressing better. I have more tomatoes and cucumbers ripening in my garden, good use for them I forgot about this salad. I am going to try it both ways because I love tomatoes and red onions together.

@@cookingwithcoit If you try it let me know how you like it. This was made by a Greek lady that was a friend. It doesn't keep because the avocado breaks down but it is good. Oh and I forgot to put in the original post that the juices from it are delicious when French bread is dipped into them.

For those Chinese without mustard, you can replace it with soy sauce but don't need to put salt in it

Do you like Balsamic Vinegar? You could also just do some olive oil and salt for this recipe too!

Hi Steven- I would just cut every ingredient in half and then salt and pepper to taste based off of that. How does that sound?

Always you should put salt on tomatoes so they start losing all those sweet juices before seasoning them with the dressing. Just a free tip.

One simple thing I do - ready in minutes - is tomato slices and grated carrots in a bowl, add lemon juice, a little parsley, salt pepper, and a little sprinkle of sugar. Serve chilled. If you want a bit extra, you can prepare a light dressing of white vinegar, honey, some mustard, and some gently roasted whole peppercorns in dilute lemon juice, and sprinkle some oregano on top. Not necessary though. The tomato juice will be a nice dressing by itself

Two suggestions: one ... add a little sugar to broaden the sweet/sour contrast. Two ... shave. I'm tired of all the "cool" chefs with the two-day old growth. Unsightly, unhygienic, slovenly. Jus' sayin' ...
