Kannai station, Akiyoshi for yakitori. Kannai is very close to China town. As for Chinatown itself, anything that catches your eye should be good.

Having been to many "chinatowns" around the world, I have to say this is the cleanest one I've ever seen. No doubt the Japanese demand for being clean had a big impact on them. Most of them have garbage and rats running everywhere. 🥴

If you are on the Minato Mirai line, just get off at the last station, it's called motomachi chukagi, chukagi meaning China Town! You also get to see motomachi, the first street that ever had foreign goods in Japan, and is a famous shopping street. Don't go via nihon odori! Personally I would get the kehin tohoku (negishi line) and get off at ishikawa cho station, you then go to the main entrance of China town. This guide isn't good!
