that's the way it works. The spokes have to know where to find the hubs. The hubs don't need to know about the spokes, as the spokes will find them and register themselves
If you configure IPSec, you may need a certificate. GRE and DMVPN are for the tunnel, and are not encrypted by default. Adding IPSec encrypts the traffic. They support using PSK and certificates for authentication. So, yes, you could use a certificate in this case if you want to.
Yes, we will touch on these in video #2, especially when we talk about phase 3 and shortcut routes. We'll have a special video on routing with DMVPN in the future (but I haven't written it yet).
These are DMVPN terms. A hub router is a router that other routers connect to. Spoke routers connect to the hub router If you drew a picture of what it would look like, you would have something looking like a star or flower. The hub router is in the middle, with spoke routers connecting to it
