My hubby is on a cornbread kick lately so I think this is what we’ll be having for dinner tomorrow. Seems like a versatile recipe where you can add things you like and omit the things you don't. I usually make cornbread from scratch but if I use Jiffy I always add a tablespoon of mayo to the mix before baking. Might sound gross but I promise you can't taste it. Keeps the cornbread from getting so dry. Thank you for sharing this recipe with all of us, it truly looks delicious! 👍🏼😄

You can use enchilada sauce instead of the boulion and tomato sauce and taco seasoning. It saves money and time and gives it an incredible flavor.. sprinkle a couple T of corn meal in the meat mixture and mix if you want it to thicken as it Cooks and it gives it a great savory sweet flavor. Can I come to your house for dinner? You made me hungry..looks delicious!

Because this is NOT Mexican food, RIGHT!?!!! NO it's pre-packaged and canned ULTRA HIGH sodium and MSG laden mixes that will cause you to swell up and wish you were dead because you've just destroyed your health. If you really love Mexican food learn to cook it from scratch. It costs less, its better for you and you learn the basics of cooking. This is trailer food.
@@asabove6815 leave out all the seasoning packets and use cayenne, garlic, onion, cumin, some pink Himalayan sea salt and fresh cracked peppercorns, etc.... means learn to season your food with actual herbs and spices... make homemade cornbread, home canned tomatoes, ...real food. I have made this sort of dish twice in two months. No boullion, no taco seasoning packets... it will kill ya eating like this, it's like too many casseroles with Campbell's cream of whatever soup. Make your own roux with a little portabella or chicken or celery... real food. Good weekend to you and enjoy real cooking.
This is called Tex-Mex food. It's American with Mexican flavors. I wouldn't use all the prepackaged items personally, but switching out for "scratch" ingredients would be very easy. But if you are on a budget, use what you can afford! I will be making this tonight but with pork instead of beef. Casseroles are good 😀You should try a few!

I tried it with ground chicken and it was awesome. I didn't have any ground beef and thought i did but i had 2 lbs of ground chicken. I almost didn't put the cornbread on top because it was good corn and chicken chille the way it was.
I've been wanting to make this and have looked at other recipes. But this one I will make, but just making homemade cornbread mix cuz I don't have jiffy mix 😁 thanks for sharing 👍

I made this but was not happy with the cornbread baked on top. When I do it again I’ll bake the cornbread separately.
