A little about donuts
After I tried this method and that, in my opinion the most beautiful results were with prints. And the best mold is a donut mold like the one I use. It's quite expensive but very useful, in my opinion...
But before this, every time I used the mold the results weren't pretty, the top always wrinkled, it turns out there is a way:
put the donut upside down, then press 2x (change position)
turn the donut over, press 1x then make a hole
Donuts are coated with flour and proofed without covering so that:
Donuts do not absorb oil when fried
When the donuts are proofed open they don't dry out
proofed open so the donuts don't get damp, damp donuts are prone to absorbing oil
Use of eggs
In my opinion, the egg yolk makes the donut lighter, resulting in a taller white ring
Whole eggs from donuts are denser and heavier so they harden faster after 1-2 days
Using bread improver/softener is very important if you want the donuts to be soft for days or after they are frozen they will still be soft. Can use Bakerbonus and ibis blue
Many people use SP in donuts, I have never tried it, but I have tried SP for bread, I don't like the results, the texture of the bread loses fiber, it becomes soft/soft like sponge cake. The SP can be replaced with egg yolks, so if you want it to be soft for days naturally, add more egg yolks (suddenly it occurred to you, what if you use 4 egg yolks for 300g of flour?)
How to fry donuts
fry donuts in medium hot oil 160-170C
If you don't have a temperature thermometer, you can test it by inserting a chopstick into the oil. If it foams, it means it's ready to use
After the donuts have been fried for 30 seconds, immediately flip them over, and then wait until the donuts are brown and then flip them over. Don't turn the donuts back and forth because they will absorb oil. This method doesn't absorb oil, it just makes the donuts prettier and sturdier
