GREEK STIFADO (STEWED BEEF AND ONIONS) - STAVROS' KITCHEN - GREEK CUISINE

  • CHECK FOR THE INGREDIENTS BELLOW, ONE OF THE MOST FAMOUS GREEK DISHES, ABSOLUTELY DELICIOUS !!!! YOU CAN HAVE IT WITH RICE, ROASTED, MASH OR JUST EVEN BOILED POTATOES.
    INGREDIENTS
    2 TABLESPOONS BUTTER
    2 TABLESPOONS OLIVE OIL
    1Kg STEWING BEEF
    500G SHALLOTS, SMALL ONIONS
    1 TIN OF TOMATOES (400g)
    1 TABLESPOON TOMATO PUREE
    1 MEDIUM ONION, CHOPPED
    2 CLOVES OF GARLIC, CRUSHED
    3 INCHES RIND OF ORANGE PEEL
    1/2 CUP DRY RED WINE
    1/2 CUP WATER
    2 TABLESPOONS VINEGAR
    1/4 TEASPOON GROUND CINNAMON
    1/4 TEASPOON GROUND NUTMEG
    1 TEASPOON SUGAR

    I've been too Greece numerous times I find this recipe to be the exact definition of what I would call Stifado, so every time I cook it I look for this video!

      +andrew truzzi Thank you very much for your great comments, and nice compliments for my Stifado. It is one of the best recipes that I have tasted over the years, and the only other time was in the Netherlands, not Greece!

    Hello Arnaldo i made this fabulous dish last night for me and my wife and 3 of my relatives we absolutely loved the meal full of flavour and very tasty we even had enough left for our meal tonight, once again fabulous.

    Hello Arnaldo. I have been to Crete many times and this looks very much like the Stifado I had there. Stifado is probably my personal favourite dish of all the greek dishes.
    I have tried to make Stifado a few times in the past, but the meat never seems to get very tender. I have tried to cook it for 3 hours but it still didn't reach the tenderness I was hoping for. Any ideas on how to get very tender meat?

      Hello Tdesting. Sorry to hear you haven't had much success with the Stifado. To be honest with you, I can only think of one thing, that can go wrong... I can only tell you how I prepare it! Fry the meat in two batches; when first the meat is placed in the pan, make sure the hob is high and the oil is very hot to seal all the juices in, then turn the gas down to medium. If the oil is not hot enough the meat looses its juices and therefore becomes very tough. Allow the meat to brown well before you turn it over to fry the other side, but, at the same time keep an eye to prevent it from burning. Avoid fatty meat with veins!!! I use stewing meat already diced. One more thing!!! Once all the ingredients are in the pan, minus the onions, always cook on a very low heat. I hope I have been of some help to you. Wish you luck.       Hello Magda, I only just got your message. You can prepare it with out the wine. the only other thing you can use some vinegar instead!

    THE REAL, THE ORIGINAL STIFADO, IS MADE IN GREECE WITH HARE or RABBIT, BUT OF COURCE YOU CAN MAKE IT WITH OTHER KIND OF MEAT, LIKE BEEF, CHICKEN, OR EVEN PORK,....SOME GIAGIAS (GRANDMOTHERS) CAN PUT ALSO A 1-2 LAUREL LEAFS, AND A STICK OF CINNAMON.....ANYWAY, WITH ALL WAYS, YOU WILL ENJOY A GREAT MEAL.!!!

    Stavros its means in english Stewed Beef and Onions lol not beef stew , Greeks dont make a version of beef stew,the french do
